The order was made by looking at the menu; it was an à la carte option.
The owner, Mr. Noomoto, recommends meat uke and limited-edition thinly sliced liver.
Hearing that there was a valuable "Wanghe" from Kumamoto Prefecture, I decided to try ordering various cuts of beef brands like Chateau Brienne and Kagoshima's famous beef.
Let's moisten our throats with a dry beer before starting with kimchi with a moderate spiciness.
With the ignition of the roast, appeared the beautiful "Nishiki Yake Uke".
As rumored, the pink sliced meat was intertwined with egg yolks, creating a deliciousness that seemed to melt one’s heart.
The key to this restaurant lies in its thinness, which contrasts sharply with the usual texture of food that we are accustomed to.

On large plates, the meat of the day was served. The imposing mass of meat made me even more excited.
A beautiful sauce filled with charm, it seems like it will melt away just by being brought closer. The chateau-brienne on the roasting stove, where flames and smoke dance, has been transformed into a medium-rare. When you take it into your mouth, the juices of the meat burst forth in your mouth, filling it with delicious flavors.
The taste was rich and complex, with a profound flavor and a fragrant aroma—truly a "taste of exceptional flavor."
And the large grilled loin, about the size of a palm, is prepared by the staff at the restaurant.
Carefully placed on the net by the staff using tongs, it immediately became hot.
A dressing made with sourness-infused ponzu sauce, rolled around the meat and gently placed on a plate. From there, it's just a matter of savoring the taste.
A generous amount of fresh-herb dressing provides a refreshing and refreshing taste, so even parts with a lot of sesame seeds can be enjoyed with a good balance.
The menu of rice dishes for the final course was also very appealing. Among them, I really wanted to try "Yaki Tahini Cheese Bibimbap". So, I asked for it as well.
Using a hot stone dish to crack open the bread, while carefully removing the charred parts, the cheese became melted and turned crispy.
Mitsuta cheese is a top-notch combination, so it was an excellent flavor even in Bibimbap.
It was a restaurant where you could enjoy Wagyu beef of reliable quality in various cuts. The original menu was also very comprehensive, so it might have been a good choice to order just individual dishes.
I would like to invite those who enjoy meat to visit again, in a more casual manner.
