It's been a long time since I've visited the main restaurant. It seems that my son has taken over the business. There were some changes, such as elegant appetizers, which I found quite appealing.
The unique method of blending whiteish soup with transparent soup makes the dish extremely easy to drink, with a rich texture (similar to Nagahama ramen, not too thick). It features a soup that never gets boring after drinking.
The seasoning consists of soy sauce that has turned into a powdery state, which is applied to seasonal vegetables.

During the preparation of the leavening paste, as well as the castings in the shape of watermelons made with non-salty miso tofu, these were particularly impressive.

Actually, I prefer soup-based rice over miso soup.

The last pancake? You can choose various sauces for it. I chose matcha as the sauce.
I've been here for a long time, but oh—an old-established restaurant is really great.
I thought that Mr. Shin-Miura is the perfect choice as a place for "Hōto Mizukage". In other words, if someone suggested any particular restaurant, it would be best to recommend this one first.
