With the approval of our head office, we operate under the same business name.
Opened in 2016.
The interior is casual yet comfortable, with a warm atmosphere.
Only 6 seats on the counter, limited to 2 couples per day.
The food is prepared right in front of you, so there’s a real sense of liveliness✨
The ingredients used here are truly remarkable.
The "Hibora" beef from Hiroshima, known as a "mirage,"
Being handled, and with a small number of production heads,
Rarely seen outside of the prefecture, even within Hiroshima Prefecture
Due to its limited availability, it is a rare item that is difficult to obtain.
They use branded Wagyu beef in their dishes.
Additionally, herbs and other ingredients were cultivated under the guidance of Kajiyama Farm.

The eggs were raised in Hiroshima, using a flat-raising method. The rice and vegetables were provided by my wife.

The aroma of beards is strong and smooth, making it a rich scent.
It’s so delicious that it makes you want to chant over it❣️
● Jelly of raw shrimp with anchovy and tomatoes
To make raw small shrimp into an "anchovy-like" dish using salt and vinegar

A dish made from trout that closely resembles natural trout, fried with semolina flour.
Let's enjoy the salt prepared by Tanedaya Shio Jiro-san.
The aroma of the fried food and the flavor of the trout are absolutely delicious❤️

A simple fish dish that marinates the ika in salt.
Below are onions pureed.
Above it is Latvian caviar with caramelized onions.
What impressed me was the Banyuls vinegar from southern France.
This is a very rare vinegar that is suitable for pairing with wine.
The white vinagre used is a product that has been aged.

Made with stock produced from chickens raised on flat ground
On a flavor that leaves you feeling refreshed, Fran.
A wild eight-thousand-year-old sturgeon is onboard.
● Lobster and Abalone Resort
Native sage used as a sauce, combined with oyster liver

A large mahata with a thick meat, perfectly prepared.
●ビボウシ
The elusive beef is cooked slowly over a period of 3 hours
Château Brion.
A sauce made by boiling the dashi broth obtained from beef, together with wine.
It has a clear and rich umami flavor, making the taste of the meat stand out prominently.

The best clear water in Japan, the eel caught in Takazu River, and the beef from Bibo.
Don't you think combinations are amazing?
The first cup remains as it is.
The second cup was served with miso broth, making it a dish similar to hitsumibushi.
