The chicken southman in Miyazaki was originally made with chicken breast meat. However, nowadays, those made with juicy chicken thigh meat are also very popular. The chicken southman served at the Nagaoka branch is made using local chickens sourced from Miyazaki. The chicken that has been pickled in a southman sauce is known for its tenderness.
