Today, I've been really tempted to try the deer bread that I've been thinking about all this time.
It's like spreading minced deer meat on extra-thick sliced baguettes, then grilling them in an oven or something, and finally drizzling it with basil sauce.
The minced deer meat remains juicy even when cooked, with a smooth and light texture. There is no unpleasant greasiness at all.
The saltiness is well-presented, but it's not so spicy that it feels intense. The overall taste is focused on the rich umami of venison, with everything being well-balanced.
The taste and flavor of the baguette are also carefully selected to complement the overall taste of this dish.
Very delicious, but the only drawback is that it's difficult to eat.
The baguette is too thick, and when you try to bite it, the filling spills out (^^;
The rest includes exquisite deer meat dishes served on iron plates, as well as simple cold tofu. Both dishes are delightful with an abundance of spicy green onions added to the delight ❣️
It's just cold tofu, but it comes with a specially chosen soy sauce, which is absolutely delicious! ❗
Anyway, it's a place full of deer, and also a restaurant with various skills.

Today, I’ll try the menu items that I couldn’t eat last time.
Last time, we had delicious deer sauce and deer calzapicchio. We use the same meat for both dishes, but there’s only one portion available per person. So, I had to choose either one of them. I opted for the calzapicchio.
A variety of sauces such as balsamic vinegar, along with plenty of grated cheese.
This dish is classified as a medium-rare. Although it’s cut quite thickly, it’s soft and lacks any firm texture, making it easy to bite through.
As a gesture of apology, just one portion of meat was served per person. Please pour a larger amount of red wine for me ❣️

The crispy crust is well-cut, removing all excess oil. The inside of the meat is beautifully pink in color—a truly remarkable dish! It’s also very tender and easy to chew, making it perfect for consumption.
The sauce is absent, but coarse rock salt is served alongside it.
We eat it by sticking it together with the moisture from the deer meat. This way, it becomes lighter in texture and perfectly suits the taste of deer meat. *:(°ω°):/.:+

After going through a lot of confusion, I ended up having the potion reduced in amount, and I ordered Kuma Rice.

Appetizers, main courses, carbohydrates—everything is deer dishes! It’s truly a heaven for those who love deer.
On the wall, there were a stuffed head of a deer and an introduction to the handmade deer horn accessories created by the owner.
There is only one type of wine available at this restaurant, which is Jean-Claude Mas' wine. It is a delicious wine that pairs well with anything. The price for a glass is 700 yen.
The cheese that has been grilled on a spit, seasoned with black pepper and olive oil, is already extremely delicious.
Deer sauce. The juicy deer meat, roasted to a pink color, is cut into bite-sized pieces. It is seasoned with salt and sesame oil, and topped with green onions.
I understand why there is just one type of wine, but there are 14 types of sake available.
Moreover, the amount of venison alone is enough to make 2/3 of a venison steak. It’s very tender, and the cooking level is perfectly balanced—truly delicious! At 680 yen, it’s an extremely high cost-performance ratio (´⊙ω⊙`).
The roasted deer meat was brought over with steam rising from it.
It is seasoned with a generous amount of pepper, accompanied by plenty of garlic chips and a savory soy-based sauce. It is also served with coarsely ground rock salt.
The venison has been thoroughly cooked, but its tenderness and juiciness have not been compromised.
I prefer the sauce over rock salt.
Jean-Claude Mas can drink as much as he wants without getting bored, and he doesn’t become noisy or interfere with the food.
With just one type of red wine, this restaurant demonstrates a clean and confident approach to its business. The owner here is definitely no ordinary person.
Deer Chigyarenmen.
In a extremely deep Chinese pot, plenty of raw eggs were placed at the end.
The generous amount of venison is extremely tender. The chile-sauce is spicy and flavorful. The ramen is medium-thick, allowing it to blend well with the soup. Moreover, it does not become mushy.
There are plenty of solid objects at the bottom. It's probably garlic. Tomorrow is a scary day. But it's delicious‼️
I enjoyed it immensely.
For a while, no deer is needed. Until tonight at least.
Who would have thought that there would be such a restaurant nearby.
And, the owner-chef really has an amazing sense of taste!
