Amid the bustling atmosphere of a new world, there’s one place that stands out prominently: “Taisho 5th Year Established, Tsukusatsu Gifuyabonja”. The store’s traditional atmosphere and clean, inviting interior made me decide to enter without hesitation. Inside, the atmosphere is lively yet clean, with the sound of craftsmen frying tsukusatsu as a pleasant background music. I ordered a few standard tsukusatsu. The skin was crispy, and the light taste made it easy to eat even if I had several pieces. What really surprised me this time were the side dishes, the dote-yaki and doroe kake. The dote-yaki featured beef tendon that had been gently cooked for a long time, resulting in a soft texture that melted in the mouth. The sweet and savory miso flavor was deeply absorbed. Just this alone made it worth eating several bowls of rice. But the real discovery was the doroe kake. As I sipped the rich chicken-based soup, I couldn’t help but marvel at its thickness and depth. It resembled a top-quality ramen soup. The vegetables added sweetness to the dish, making it irresistible. This isn’t just a side dish; it’s worth visiting just for this dish. The combination with tsukusatsu is outstanding, allowing you to enjoy it without getting bored. I hope you will experience the doroe kake at Gifuyabonja when you visit.
