One eternal beauty still alive [Elm Garden]
A Japanese garden covering an area of about a thousand pyeong, spread out on the high terrace of Fushimi.
Entering the restaurant, greeted by staff in traditional Japanese attire, with that green scenery as a backdrop...
It feels as though the air itself is softening and changing direction.
Seasonally changing gardens, which are not merely "scenery" to be viewed, but...
One of the attractions of Elm Garden is that one can truly experience the cuisine as part of their own experience.
As one progresses along the stone-paved path, the green canopy woven by the branches covers the sky.
The sunlight filtering through the trees falls onto the water's surface, creating delicate patterns of light.
The garden, which wears different colors depending on the season,
In spring, it reflects the dream of floral splendor.
In the summer, it is filled with a deep green tranquility.
In autumn, the leaves fall like flames, covering the ground.
In winter, white silver cleanses everything.
In this season, as a special summer initiative, there is the "Fengzhong Path."
You can walk around and explore a fantastical space adorned with 888 wind bells.
Shinohara Fūrinbēfu (Edo-style bells) and Glass Studio in Otaru, among others.
Since various types of wind chimes are used here, it's a nice activity to stroll through the garden of Elm Garden after meals.
Even a moment of celebration, even a drop of emotion...
Everything is embraced by light and shadow, quietly becoming a story.
【エルムガーデン 松花堂ランチ体験】
This time, I had the Sōkodo Bento for lunch.
The first drink I ordered was a homemade lemon sauerkraut.
A slightly fruity acidity that leaves a lingering taste of fruit.
It provides just the right sense of coolness at the very beginning of this meal experience.
When the lid of the bento is opened, a colorful array of eight dishes appears, as if containing the four seasons within it.
• 蒸し物:唐黍ムース
The sweetness of the corn spreads gently,
A lightness that melts on the tongue.
The flavor typical of summer in Hokkaido gently embellishes the first impression.
• 造里:焼きナマコの燻製
By smoking the fillet of salmon with a rich fat coating, the aroma lingers for a long time.
Among the items in the Sōkōdō, this is a dish that stands out prominently, reminiscent of the cool breeze from the garden.
• 旬菜:特別な時期に出回る食材を使った料理
A moistly prepared salmon, with a layer of vegetables stacked on top
A stylish approach that subtly incorporates Western elements into Japanese-style dining settings.
• Dishes: Fried puffer from Mount Fuji
The outside is crispy and fragrant, while the inside is plump.
The flavor is concentrated, and when citrus is added, it becomes even more refreshing and spread out.
• Grilled dishes: Crayfish, eggs, beans
The softness of the tofu and the rich sweetness of the crab combine to create a delightful taste.
A truly delicious presentation. Just like the view of the garden, each dish is exquisite.
• 冷鉢:焼きナスとキャベツのゼリー
包裹在清凉的果冻状料理中的烤茄子香气,以及
The texture of the vegetable gives a sense of summer's coolness.
• Small bowls: Broccoli wine thief
A wine that has a subtle saltiness, which enhances the sweetness of broccoli, making it a perfect pairing for wine.
• Strong appetizers: Yume no Daichi Vegetable Miso Grilled
Feeling the power of the earth, these vegetables are rich in flavor.
A fragrant miso accompanies the dish. The presence of the ingredients is clearly emphasized.
• 口取:Kuchinan Jaga540
Dishes made from potatoes from the local area of Kuchisan include...

• Meal: Tang Chun Asparagus Beancurd Rice
A strong aroma reminiscent of cooking with a earthen pot,
The freshness of asparagus and the rich flavor of bacon blend together, creating a delightful combination.
It truly completes the satisfaction of a meal.
After eating, staff in traditional Japanese attire prepared matcha for us.
The sweetness comes from tomato shaved ice, soy milk yogurt mousse.
Asparagus Jelly, Caramelized Dry Cabbage.
The dessert made with vegetables is light and refreshing.
While clearing the mouth, it also leaves a playful aftertaste.
【まとめ】
The Sōkodo Lunch at Elm Garden is...
It was an experience beyond just "eating food."
Space, utensils, taste, way of incorporating the season,
And with the hospitality provided by the traditional-style staff,
The scenery of the garden unfolds like a single story.
The spirit reflected from the staff's actions
The politeness and pleasant atmosphere truly seeped into my heart.
Along with the beauty of the four seasons,
The dishes are also enriched with the flavors of the seasonings at each particular time of year, making them truly unique.
Every time you visit, there are new discoveries to be made, which is also a great attraction.
Although located in Sapporo city, it offers a moment of departure from everyday life.
