I was completely captivated throughout the course of this menu, which was presented with a method that could be described as meticulous and thorough towards the ingredients.
This season-specific aroma of "Tobira Shishimaki" is simply delicious. The homemade "Ikura" with its rich and smooth umami is also outstanding. The fried scallops with shrimp and eggplant are also highly enjoyable.
And on that day, what was truly a personal home run for me was the kaki fried chicken, along with the additional matsutake mushrooms fried that I requested.
Kaki-fry not only boasts the delicious taste of the kaki itself, but also the specially prepared tangy sauce made with real mountain pepper makes it absolutely delicious!
The refreshing taste and unique flavor of mountain pepper made this dish a perfect match for kaki furai.
The leftover tartar was also excellent as an appetizer for alcohol. Just with it alone, the alcohol became more appealing.
And fried matsutake mushrooms!
Indeed, when it comes to Matsutake, it's best to eat it fried, right? (Laugh)
The matsutake mushrooms, once cooked, have even more umami and aroma. They blend wonderfully with the sauce in a surprisingly harmonious way.
It was extremely delicious.
Additionally, the selection of alcoholic beverages, especially the types of wine, is extremely diverse. Therefore, it seems that a meal centered around alcohol is also possible here.
Next time, I would like to order an à la carte menu that includes a total of 70 different items. I plan to take my time and conquer them one by one.
