【概要】
Budget: Regular lunch costs around 10,000 yen.
A Japanese restaurant located in a back alley of Ginza 1-chome.
The owner seems to have received training in places like “Buntoku Yama”.
Regularly, cooking classes are also held during lunchtime, and reservations can be made through the corresponding website.
This time, the content was simple for beginners. However, there seem to be other options as well that can improve the ranking.
Our program is not in the form of cooking demonstrations. Instead, it involves simply watching the chef's cooking from behind the counter.
Although it has been simplified, we were able to enjoy a meal that included appetizers and main dishes. In terms of the overall experience, it seems more like a lunch short course with a guided tour, rather than a traditional cooking class.
Therefore, customers do not need to do any work themselves. They can simply arrive with their hands free, sit at the counter while drinking the provided tea, and relax while focusing on the scene before them.
Additionally, after most of the preparations are completed, the dishes are served one by one. Therefore, you can enjoy the food in its freshly prepared state in a lively and efficient manner.
After the cooking class, you can also purchase goods.
【Impressions】
The menu for this meal includes white miso stew, tofu with soy sauce, sweet potato and green pepper dish, pork belly served with delicious broth-based filling, and chicken rice.
They also served a sweet taste of agar as a part of their service.
We started by extracting the broth from bonito flakes and kombu. Then, we ground the rice, boiled vegetables, and prepared ingredients for white yaki, nori temaki with meat miso, and chicken rice... I observed this entire process in detail.
Of course, all the dishes start with the broth that was initially extracted from the ingredients used. That's why Japanese cuisine is considered delicious.
And starting from the cooking degree of each individual vegetable, there are also many subtle details that you won't notice just by eating. Indeed, cooking requires a lot of effort.
Eating white yae with this knowledge, I could feel the texture of vegetables more strongly than usual.
Additionally, we were able to witness the process of making soy milk and filling salmon with a special filling from the very beginning to the end.
The foundation of the taste of our restaurant is a flavor that emphasizes the sensory experience. It is a taste that makes one desire to drink alcohol in moderation.
The price is set at 15,000 yen per item, which might be considered a bit expensive. However, it’s still worth the investment.
Among the many restaurants that simply overwhelm people with a large number of customers, making it difficult to observe properly and creating a restless atmosphere, many offer cooking classes where students cannot eat freshly prepared food. However, our program offers a good alternative: even if the prices are high, you can sit comfortably and observe, while also enjoying a proper meal.
On the other hand, as described in Google reviews, the atmosphere was somewhat intense. It cannot be denied that there were moments where the chef’s approach towards his apprentices was a bit concerning.
In addition, since this restaurant also accepts general customers at the same time, it's possible that both parties may feel a bit uncomfortable with each other.
