The first roast beef I ate was absolutely delicious, so during the COVID-19 crisis, I tried ordering it to go. However, it turned out to be a huge disappointment, so I haven’t been there for a while.
This time, since the heat had cooled down, I decided to visit again, and the taste has returned.
The roast beef is made using A5 grade black beef.

The flavor, richness, softness, and moisture of Wagyu beef – absolutely outstanding.
If I must say anything more, I would prefer a more rare or unique option.
This set of noodles also goes beyond the scope of a soba shop.
This dish, made from a blend of domestic wheat "Moe Chikara" and "Haru Yutaka", features flat-strip noodles. The noodles are of excellent quality, comparable to those offered by specialized tsukkemen shops. The addition of kombu water further enhances the smoothness of the texture on the tongue, along with a pleasant throat-clearing effect.
The base of the soup made with Japanese ducks features bonito flakes and Sonta flakes as the main ingredients. It has a broth characteristic of a soba-ya restaurant, with a strong soy sauce flavor. The soup is rich in texture, and it works well when combined with noodles.
However, the flavor of the duck was not very good.

Sabemon Soba, let me taste it first.
The soup is almost identical to the duck broth I used for the noodle soup I ate. But it seems to be paired with the soba. This version has less fat content.
However, as I mentioned in previous reviews, the soba itself has a weak aroma and is not very good.

However, since the soba wasn’t delicious, I didn’t visit for a while. But upon hearing that they serve roast beef made with black beef, I decided to give it a try and visited the restaurant.
The interior of the restaurant remains as messy as ever.
Rather than being untidy, it feels like there's a lack of consistency in organization.

This is delicious, but since the quality is excellent, it would be nice to have something like Horsladych as a side dish.

Kakusoba is a rural soba type that is thicker than ordinary soba.
I tasted it, but it didn’t suit my taste at all.
