Founded in July 2020, it is the sister restaurant of “Yakitori Abé” and continues the legacy of “Tori Shiki”. In other words, it represents the “orthodox” presence in the world of yakitori.
And, among the unique features of this restaurant series, there’s the “stop system.” In “Yang Fire” as well, this mechanism is well-preserved. It allows the cooking process to proceed naturally, adapting to the customer’s eating pace. The chicken used in this dish is a familiar “Yata Chicken” from the series. It seemed to have more fat and flavor than usual, and it’s just the right time for this dish right now.
Starting with “sabiyaki,” the moistness of the breast meat is enhanced by the refreshing taste of shiitake mushrooms. The cooking technique is highly precise, truly capturing the charm of this mild-flavored cut of meat. “Usuzura” features creamy yellow yolks that flow smoothly, with salt added perfectly to enhance its flavor. The skillful cooking technique ensures that the flavors are fully conveyed in just one bite. “Kashira” has a strong meaty taste, while the sweet and fragrant sauce leaves a lasting impression.
“あかなす”は、ナス豆の糖分が炭火でカリカリに焼かれ、タレの塩気と絡み合います。“ハツ”は弾けるような食感で、噛むたびに血の旨味が溢れ出します。“な軟骨”はコリッとして軽快な食感で、ほんのりとした味噌の香りが塩気を引き立てます。“新銀杏”は秋のほろ苦さが良いリズムを作り出します。“肩”はしっかりとした歯応えで、噛むほどに旨味が滲み出します。強い食感が全体の流れを引き締めます。“つくね”は粗挽きの食感とタレの光沢が見事な組み合わせです。王道であり、完成度が高い一品です。
“砂肝”带有较重的咸味,但这正是与酒相得益彰的搭配。咸味能够激发出鱼肉的鲜味,吸引饮酒者。而“手羽先”则皮脆、肉质饱满,连靠近骨头的脂肪都十分甜美,非常适合作为餐后佳酿的收尾之选。“ししとう”以轻盈的苦味为特点,为菜肴增添了节奏感。“あか”则以浓郁的赤肉为特色,这种以肉质本身取胜的料理值得一试。
The final dish is “Soboro Dondly”. Here too, the “meat from a roast chicken restaurant” truly lives on. The finely chopped soboro brings out the aroma of chicken and the rich flavor of fat. It’s more like a “second type of meat dish” rather than just a dondly. If you break apart the central egg yolk, its smoothness envelops the whole dish. Even until the last bite, your chopsticks won’t stop moving.
Overall, the saltiness is a bit strong, but considering its compatibility with alcohol, it’s acceptable. The selection of wines and sake is also quite extensive, allowing you to enjoy a drink that suits your taste while enjoying a leisurely meal.
