Opened in April 2024, this is a modern French restaurant that offers a comfortable and enjoyable dining experience.
The interior of the restaurant is designed with wood materials as the main theme, creating a warm and comfortable atmosphere.
Using fresh seafood from Misaki Fishery Port in Shinshū, which is sourced with local ingredients and through unique procurement methods, these dishes pursue a simple yet delicious taste.
According to the source text, during different seasons, the chef may also arrange herbs and vegetables that he has cultivated himself on the dishes.
Additionally, the Walk-in Wine Seller features approximately 100 carefully selected wines from various countries, including those produced in Nagano Prefecture. This is definitely a must-see for wine enthusiasts.
Executive Chef Shiba graduated from the Osaka Abe-no-tsu Culinary School. At the age of 22, he moved to France. He worked at several Michelin-starred restaurants and returned to Japan after his departure. He then joined the Bégue-Aran Duquesnoy Tokyo. After returning to France for further training at Au 14 Février (France), Tribeca (Italy), and Le Taiti-Van in Paris, he returned to Japan in 2013 and moved to Karuizawa. There, he served as a chef at the Cresson River Side Story. In 2023, he was appointed Executive Chef at Lugerend Karuizawa.

◇アペロ(アミューズ盛り合わせ)
This restaurant offers Amuse dishes using seasonal ingredients, along with vegetable chips as an additional item.
Many of the dishes at this restaurant have a sour flavor that stimulates appetite.
◇ラスパドゥーラ
The staff member will please remove the excess. This cheese has been aged for 4 to 6 months. It is removed from the cheese block using a special knife, and then it is made into a very thin, flaky layer before being served.
This cheese, which is extremely soft and light in texture, is made using the same manufacturing process as Parmigiano Reggiano. It has a creamy taste that spreads throughout the mouth, just like Parmigiano Reggiano.
It's extremely delicious.
This cheese is said to be the origin of Parmigiano Reggiano. It has a history of over 1,000 years. The daily production limit is only 12 pieces, ensuring that it maintains a consistent taste and high quality due to its rarity. The production method is similar to that of Parmigiano Reggiano: only high-quality milk is used. This cheese can withstand long aging periods, and the longer the aging time, the sweeter it becomes and the more fragrant it develops.

The asparagus during that period were very thick, sweet, crisp, and delicious.
The bacon, which was well smoked and had its flavor concentrated, was also delicious.
◇ミナザキ産のいかとキノコ&筍のペルシャ―ド
メトイカとは、小さなカンサキイカのことで、三崎の名物となっています。
The octopus is soft, and the multiple mushrooms and bamboo shoots enhance the rich flavor of the ingredients. Wrapped in fragrant Persian dressing, it tastes delicious.

◇Moon Pawpaw and Veggies Coco
The Moon Spotted Bear is my favorite dish, so it's a very pleasant menu for me.
The bear was delicious, without any unpleasant smell. The vegetables were cooked to an appropriate firmness.
◇ Red Wine Braised Beef Tenderloin
The source wine has a strong aroma of red wine, and it is quite fresh and crisp.
The meat had less fat, and it was cooked thoroughly without being too greasy.
◇しんしゅうたろうポーク
The pork meat produced by a producer who cultivates delicious pork in Shinshū truly complements the rich flavor of the pigs themselves, with a simple but effective seasoning.
The fatty parts are not persistent, and they help to enhance the deliciousness and aroma of the lean parts. I hope that those who usually don’t eat them will consider trying these fatty parts without any concerns.
◇毎日替わるパン4個、無塩バター
The bread baked in the restaurant is all delicious, and I ate a lot of it. The butter also has a strong milk flavor and is very tasty.
Many of the sauces used for the dishes had a hardness similar to that of soft French sauce.
In particular, I liked the purple berry-themed bread.
【Impressions】
We received a plate as a celebration gift.
The cheesecake was moist and rich, with a strong flavor of cream cheese. The ganache was so thick that it gave the illusion of eating raw chocolate, which was highly to my liking.
Each of the cakes is extremely delicious. Next time, I would like to try the desserts during lunch as well.
As a souvenir, I brought back the "Shinshu's Universal Spicy Seasoning, Seven-Spice Red Peppers" (500 yen) offered by the restaurant.
There are no unnecessary additives at all; it relies solely on ingredients. The taste is perfect for any dish, and it's extremely delicious. I've enjoyed it very much.
It contains aloes, chili peppers, and mountain pepper, making it incredibly appealing.
Next, I plan to purchase these items not just for myself, but also as gifts for others.
From the station, it's also very close. The dishes were cooked with the best ingredients, and overall, it was a really wonderful place with excellent taste and comfortable atmosphere.
Also, when I visit Karuizawa again, I would definitely like to go there.
