I moved to Fukuoka shortly after I arrived there. At that time, and again some time later, I used their takeout service.
As indicated in the name listed on Google Maps, it is called “Teisho Shuu”. In fact, the menu for takeout orders is more comprehensive compared to the regular menu at the restaurant.
The sushi ordered from the delivery service was actually much better than expected, so I really wanted to try fresh sushi at a restaurant myself.
For safety's sake, I decided to call and give it a try.
From Yayoi坂, take a street that leads to Kasuga. There isn’t any prominent signage; only a plaque with the restaurant name is placed at the entrance. So it might be a bit difficult to find.
Since it has orange-colored walls, it can be said that it stands out.
There is only one parking space in front of the restaurant.
At the entrance of the restaurant, there was a note stating “specializing in reservations”. However, it seems that no reservations are needed during the day.
The interior of the restaurant basically doesn’t have a counter area; there are only about four tables available for dining.
During the day, there are only two types of lunch dishes: 'Sakura' for 2250 yen including taxes, and 'Lan' for 2970 yen including taxes.

This sushi rice is small in size, and the balance between the sushi rice itself and the sushi is quite good. The deliciousness of the sushi rice is conveyed in a dynamic way.
Whether it's for delivery or as a traditional sushi meal, the portion size is slightly larger than expected.
It's a small size, so it doesn't really stand out much, but it's a bit of a pity.
The white fish are tuna and catfish.
Freshly prepared, with a elastic texture that gives a sense of tension when chewed.
The shrimp is served on top, with alive shrimp included in the dish called "Kōkyū Ebi". However, the lunch menu consists of steamed shrimp.
The live shrimp are also quite tempting, but this steamed shrimp has a plump texture, making it very satisfying.
The seaweed rolled into a spiral shape is somewhat fragile.
This might also be a response to food delivery requests, but the texture of the oysters and ikura remains intact after being delivered.
This region probably has its own unique traditions. However, I prefer products with a fine texture and sharp taste, like those made from Aomori seaweed. So, it's a bit of a pity that such products are not available here.
The drink is tuna broth.
The broth showcases the rich flavor of the tuna, with a refreshing richness in its fat. It's truly delicious and satisfying.
This is a special experience that cannot be enjoyed through takeout or delivery services. It’s something that can be enjoyed directly at the restaurant.
The tea bowl steamed dish contains small pieces of rich mayonnaise and tuna cutlet. The flavor of the broth made from eggs is very profound.
It's freshly cooked, steaming hot. It feels like I’ve been a long time since I last tasted a proper tea bowl steamed dish.
The coffee here is really good too.
Since the nikiri is a small portion, one serving as a takeout portion seems slightly insufficient. However, this lunch menu includes plenty of items: a hot drink, tea steamed with soup, dessert, and even coffee for after-dinner use. The overall satisfaction is high.
Since there's no need to drink hot drinks or enjoy steamed foods to cool down after meals, that aspect is also a relief.
It can be said to be a lunch menu with high value at an affordable price.
Day and night, the menu in the restaurant only offers two types of set meals. However, they seem to be willing to accommodate various requests.
On the website, there are various other menu items available. In fact, there are even eel dishes, Hōkoku-Men, and frog dishes as well.
As ingredients for the dishes, there are even packs of cut pieces of octopus and tuna.
One reason is that it's close to home, but it's also a restaurant I really want to visit again. The delivery service is also good.

I believe that takeout is not considered a form of dining in the traditional sense, but it is the most convenient and safe way to utilize the dining industry.

So, I searched for a restaurant that would deliver food to my home. This is the result of my search: HIT. I ordered one portion of “上ぎり” and one portion of “中ぎり” by phone. The food arrived after about an hour, and I settled the payment in cash at the same place.
With the delivery, instant hot water was included.
Both dishes contain hirame, which is of high freshness. It can withstand the pressure from biting down on it in the morning. The red meat of the tuna also has a natural color, and its aroma is quite pleasant.
In terms of quality, the “上にぎり” and “中にぎり” differ significantly. The “上にぎり” includes shrimp and abalone, while the “中にぎり” seems to feature steamed shrimp. However, the main difference lies in the use of ingredients: while the “中にぎり” often contains steamed shrimp, the “上にぎり” uses live shrimp.
The carapace of the shrimp is also roasted until fragrant, and it comes with it. The flesh is very tender and has been briefly blanched in boiling water.
When comparing the inside and the top, it is still recommended to choose the top option as it provides a higher sense of satisfaction.
The size of the nigiri is relatively smaller compared to that of the rotating sushi. With only 8 pieces, the quantity might be a bit insufficient.
The barrel will be collected the next business day.
