I found this restaurant listed continuously in a well-known guidebook, but its rating on Yastogol was quite low. It took a long time before I finally managed to find a place like this.
I regretted coming here a little earlier. This is really a great restaurant.
It's a tea kaiseki meal, but the various dishes that have a more casual, cooking-style feel actually bring a sense of comfort to the stomach. Isn't that great?
Yōzu and Seiguin radish and flower-based white miso dish
・The flavor of the yuba spreads throughout the dish, making it very flavorful. The sweetness of the white miso is also well integrated, making this a delicious dish.
Sashimi... the flying fish from Soshima... especially the flying fish was very delicious and moist. The flying fish from Nagasaki is known for its unique taste. However, it wasn't as delicious as the flying fish from cold regions.
Sushi made from ebi and taro, topped with tostada of okazaki. It’s simply delicious! There’s no other way to describe it. The sweetness and a certain moistness of the ebi and taro, combined with the rich umami of the hida-miso used in the dressing, make this dish truly outstanding. The okazaki tostada is sprinkled with rock salt, which also adds to its deliciousness. It’s really well done!
活ズワイガニの塩焼き…たっぷりと皿に盛られていました。実は、蟹を剥くのが面倒なので、ほとんど蟹を食べることはありません。でも、一口食べたら、最後まで夢中になってしまいました(笑)
Anyway, the sweet salt-baked dish really highlighted the natural flavor of the meat. The rare cooking method was perfect; it seems that the salt and rare cooking technique helped to make the sweetness stand out.
This pot of eel and fried rice is truly outstanding. The rich flavor of the eel makes it simply divine. The soup is incredibly delicious; the fried rice is soaked in the delicious broth from the eel, making it unforgettable taste experience.
カニみそごはん・・思わずお代わりしたほど、おいしいです。こればかり食べてしまいますね。味噌の量は適度に調整し、本来の旨味を楽しむために酒を使います。ご飯ももちろん、土鍋でしっかりと焼き目をつけてくれて、硬さもちょうど良い感じです。三つ葉がちょうど良い脇役になっています。。。よく味を知っているね、ご亭主。
On top of the strawberry is matcha cream... Strawberries are naturally sweet, but to balance the sweetness with matcha, cream, and Condensed Milk, we used Condensed Milk to fine-tune the taste. It’s a concept that seems possible, yet difficult to execute. I must bow in admiration for such ingenuity.
Overall
I really like the taste of this restaurant, and I enjoy it.
Both are excellent, and each has its own unique charm.
We pay great attention to the ingredients, as it's just your husband who is in charge. Since there are no labor costs, we can focus all our efforts on the ingredients themselves.
The casual and unpretentious kaiseki cuisine truly brings a sense of relaxation. The interior is completely silent, with no background music at all. The master of the restaurant is also very quiet, unless we approach him directly. Therefore, it doesn’t feel awkward at all. It seems that the master’s personality remains unchanged in this place, in everything. This place… everything here is just as it is.
It's a good restaurant.
I hope it remains quiet and undisturbed like this.
