The owner-s chef trained in Europe, the birthplace of jibé cuisine, and returned to Japan. While working in Italian and French restaurants in Japan, he translated numerous cookbooks published in their home country using a dictionary. Through this study, he came to truly appreciate the charm of jibé cuisine.

This time, the adults ordered a course for 4,500 yen, while the grandchildren chose individual dishes.
First, I asked for drinks.
I chose a white bottle from the recommended brands. Peperino (white) – it’s clean and easy to drink!
First, we serve homemade, freshly baked pot roast bread and Parmesan ham. It's a delicious ham that I really like. It was served together with the bread.
Next was a salad of deer meat cooked at low temperatures. The fresh vegetables—such as arugula, lettuce, and chard—were served with slices of deer meat. As a topping, there was a version of zawerkraft's bitter melon dish (a traditional dish from zawerkraft). Together, these ingredients created a combination of sourness and the bitter taste of the bitter melon, along with a deer meat ham that had no unpleasant odor at all.
Next, the island pizza ordered by our grandchildren arrives. It contains gorgon honey. The dough used for this pizza is made from pane carazzau, a type of bread from the Italian island of Sardinia. This pizza was created when the restaurant was established in Islandmune. It’s a unique pizza created specifically for the restaurant.
The crispy texture of the dough is truly unique; it offers a different taste from traditional Roman Pizza, making it a pizza I would love to eat again.

This dish, a Bolonezé topped with deer hormones, was absolutely delicious. The pasta was fresh and flavorful.
I asked for a recommendation for red-colored bottles.
A steak of deer meat was served. It was carefully cooked, and the inside was rare, soft, and full of flavor. It was a delicious red meat. On the side, there were erinopsis, shiitake mushrooms, Moroccan engen, and mini tomatoes.
In the Kansai region, there are also restaurants that serve Zibie cuisine. However, most of them purchase meat and serve it directly to customers. It's rare to find restaurants that conduct all the processes themselves—from hunting, dismembering, prepping, aging, to cooking—and then serve the final product to customers.
A restaurant where you can enjoy delicious game dishes in a convenient manner. This is my top recommendation.
