This is a truly excellent restaurant that I wish I could keep hidden. It's a precious place where seafood is served, and I'm a bit hesitant to recommend it too openly.
We visited Yatchibara Koso-san in Ueda City.

The rice used for brewing this sake is Yamada Nishiki and Gozenko.
A taste that is clean and refreshing, with a rich and transparent flavor.
Interestingly, it’s also good that the music isn’t overly sweet.
It has a taste that complements Japanese cuisine perfectly. It enters the palate smoothly, allowing for a leisurely enjoyment of delicious flavors and fine wines.

This is a famous sake for those who are knowledgeable about Japanese sake. However, it's also good that it isn't too mainstream.

●金太郎イワシの塩焼き 価格不明
The chef was recommended as a good source of mackerel, so it was ordered immediately.
I can have anything that I want, so personally, I really like restaurants that take the initiative to decide what to serve.

That is also a great feature of the restaurant that boasts its fish products!
During the rainy season, this fatty mackerel is caught in the Osaka Bay and is known for its rich flavor.
A body that feels full and satisfying, with a rich flavor and a refreshing bitterness.
The cooking degree is excellent, and it has a fragrant aroma.
We used shikami ginger as an accent, occasionally snapping at it while enjoying it with daikon miso and a small amount of soy sauce. It was delicious.

The rice used for making sake is, well... just rice.
A wine from 27by, aged for about 3 years.

It's amazing that one can obtain such items.
Just because it's large doesn't mean it lacks finesse; it captures the delicate flavor of the oysters perfectly.
Fresh and invigorating, with a delightful aftertaste.
Delicious...(* ̄ー ̄*)
The aroma of the sea is rich, giving a feeling as if you are floating in the vast ocean (laugh)
It seems that there isn't much profit to be made here. I'm sorry.

The accent is nice too, I like it (laughs).
《総評》
A restaurant located relatively close to the intersection of Route 18 and Tokuda 3-chome.
While it's a bit far from Ueda Station, it's a great restaurant that you really want to visit even if you have to travel a long distance.
This is a restaurant that offers fresh and top-quality seasonal seafood, providing enjoyment even in inland locations.
When you visit this restaurant, I believe the stereotype that Shinshū has weak seafood offerings will be completely dispelled.
Even in inland areas, depending on the route, it is possible to obtain excellent fish and seafood from both the Pacific side and the Sea of Japan side. This restaurant truly embodies that concept.
The interior of the restaurant consists of a counter area, tables, and private rooms, but it’s quite cramped.
Since the percentage of regular customers is also high, it is recommended that those who come from farther away make reservations.
This is a very crowded and popular restaurant. However, during the early hours of the day, it’s relatively easy to get a table.
There are also menu items that don’t include seafood, but I definitely prefer the seafood-related menu items.
Thank you very much for your hospitality.
