This time, since there was a continuous supply of meat, I chose rice with dashi broth made with wakame and small intestine.
With careful attention to time, excess fat was removed. The small intestines were roasted over charcoal. And there was an abundance of dill, as if it couldn’t be any more.
Just delicious umami in the earthen pot rice is simply outstanding.
