That is the "Kokoro no Kojima" of those old men—Hatamoto-cho. Anyway, I entered a building in a suitable location at the intersection of a subway station. This is the restaurant I found there.
Normally, it’s a restaurant type that I would never enter. But, unexpectedly, this place has become a huge success!
Despite having a clear and easy-to-understand menu, there are many Japanese sake options that truly taste great. The master chef also has a deep understanding of these wines and provided very insightful recommendations.
First of all, Junia is named after his son. It seems that Junia is a name given to sake made by sons. This is a soft sake that brings a sense of umami from the rice. Delicious.
This is a dry-style sake from a restaurant with skilled concierge staff who managed to convert all the sweetness in the sugar content into alcohol. This is truly the best version so far. The addition of alcohol gives it a more stable taste, similar to an Indian Pour-over. (No, it’s not like that.) Is it because the alcohol enhances the flavor? The middle part is straight and has a great taste.
Thanks to that, my wounded heart was completely healed that day. Even though I didn’t eat anything at all…
