It's my fourth visit in about one and a half years.
There are many famous sushi restaurants, but this place can be considered a hidden gem among them.
It's puzzling that the current food review overall rating doesn't match the quality of this restaurant...
It's unfortunate that some restaurants have become so famous that it becomes difficult to book reservations. I really don't want to tell people about this, as it changes the cost-per-performance of these restaurants over time.
However, I hope that many people will also be aware of the greatness of Mr. Hiragi.
It's a complicated feeling.
The interior of the restaurant has only one counter seat for 8 people, with spacious intervals between the seats, allowing for a very comfortable dining experience.
The interior of the restaurant features a beautiful white wooden counter, which exudes a sense of cleanliness and lacks any unnecessary decorations. It has a clear and calm atmosphere.
Every time, the restaurant is almost fully booked. The customers are mostly families, couples, and perhaps local residents from Otsubara. Even when the venue is full, it remains quiet and gives a very elegant impression.
First, at Shirohoko, I moisten my throat on those hot summer nights.
As someone who loves beer, this is definitely a great place to go!
Shiubonogu is a limited edition beer from Sapporo, which can only be enjoyed in limited locations.
A premium barrel-aged beer that is unfiltered, preserving the live yeast intact.
In terms of taste, it has a very soft texture and a floral flavor.
It's quite rare to have the opportunity to experience something like this with Mr. Hiragi. It's really a great pleasure to have him as our host ♡
First, let's start with the side dishes.

The first dish is white fillet.
This is a delicious and tender texture along with its sweetness; absolutely the best Maco Garai.

Large in size, with just the right soft texture to the touch, and a pleasant aroma.

It's lean, but it has a somewhat medium-lean texture to it.

The tahiko, which was carefully prepared with time and attention as part of the preliminary steps, is then subjected to a further two hours of steaming cooking.
It's extremely soft and has a rich flavor.
◆ Boiled Abalone
This is also soft in texture; it seems that it has been cooked for a considerable amount of time.
◆ 太刀魚 出汁付け焼き
This is a braised dish with soy sauce, so the skin has a crispy texture, while the meat has a moist and delicate taste.
◆ べったら漬け
Aromas of Japanese pomelo, bringing a sense of relaxation.
Here begins the start of the hand-tossing portion.
The shari is well-balanced with red vinegar, and it is handled in a soft and fluffy manner.
Yet it doesn’t collapse... General Hiragi’s skills are truly remarkable!

It’s been over a year and a half since our last visit, but the restaurant still lives up to all our expectations.
Anyway, everything is delicious.
The chef, who has a wonderful smile and an elegant demeanor, always provides detailed explanations about the ingredients.
Another important feature is the dressing room.
Equipped with built-in air conditioners for the dressing room, it provides a cool environment in summer and a warm and comfortable one in winter.
This is a very important point for women.
Tonight was also an excellent night.
