The interior of the restaurant features a space with a black-themed decor. The background behind the counter is framed by windows, creating a stylish atmosphere.
A 10-seat L-shaped counter, with a cutting board and hands illuminated by bright light. The ingredients neatly arranged in the ingredient boxes create a sense of anticipation and excitement.
This wonderful location is where the master chef has been working for 16 years at "Sushi Zen," a renowned sushi restaurant in Sapporo. After years of dedication and hard work, he decided to open his own shop in December 2022.

The service speed was extremely slow, allowing for a comfortable atmosphere where conversations and drinks could be enjoyed at a leisurely pace.
The menu transition from picking to serving is designed to include sashimi, steamed dishes, individual items, and seasonal products as well as ingredients typical of Hokkaido.
The shari is made from red vinegar, with well-defined grains. The taste of the ingredients is slightly sweet, while the acidity is effectively highlighted, resulting in a delicious flavor.
It has a size that is slightly smaller than the standard, making it easy to put into the mouth. It offers a balance that emphasizes the taste of the food, providing a delightful experience.
Such ingredients truly convey the essence of Hokkaido. You can experience a special sense by enjoying things like herring, grilled kinkit, hairy crabs, and clouded salmon.
The restaurant was well-received by the guests we brought, so even if the food review ratings were low, I'm relieved that our choice of restaurant was effective.

Today was also a special "Birthday Surprise" day. We were served cakes brought by ourselves at the right moment, which made it a huge success!
Even though the master's actions seem like a step back, he is able to actively explain anything you ask him. His calm and steady mannerisms, along with his gentle and soft demeanor, give a sense of reliability that is characteristic of a true sushi master.
