Just a little past the bridge over the Kanda River from Nakano Shinbashi Station.
I sit at the counter, taking in the menu.
Choose sake and side dishes from Yamagata to enjoy together.
First, I tried the Kaku High-Ball. The side dish served with it was a Japanese fish called "kōdogo" preserved in a Western-style sauce—something I had never tasted before.
The appetizers include Yamagata's specialty, yama-katsuo (small bowls of itokatsu), and a combination of obanzai dishes. You can choose any three of these items.
Obanzai is,
・Yamato spinach and ricotta salad
・Yamagata Warabi Pon Sauce Pickled
・Seaflower Salt-Poached Mussels
The recommended sake from the menu is cold sake for summer. I tried serving it with Yamagata's Japanese sake, specifically "Shin孙 生酛純米の魔斬".
Delicious yuba and warm sake – absolutely delicious!!
Although it’s not listed on the menu, I ordered the Rengo Fujifu, made with locally produced ingredients, served in a warm glass.
To the warm sake, we added sashimi, specifically活北寄貝.
Small in size, but delicious. This type of northern clam is great served warm.
I enjoyed Yamagata in a late afternoon at Nakano Shinbashi.
