We went to a creative sushi restaurant located in Tsurubashi, Osaka.
■鮨 マナブ
Sushi MANABU is a sushi bar located near the JR Tsurubashi Station in Higashi-seki-ku, Osaka City.
The characteristic of this place is that you can enjoy original, handcrafted sushi in a convenient manner.
The interior layout features "L"-shaped counter seats that surround the cooking area.
There are about three tables available, creating a pleasant atmosphere that seems suitable for small groups as well.
A cheerful and friendly chef prepared the sushi for us.
Sushi costs from 200 yen per kine.
The characteristic feature is that in addition to the usual handmade sushi, there is also a menu of creative sushi options.
This time, I ordered the "Creative Special Sushi Course" which allows me to fully enjoy creative sushi.

First, let's toast with drinks.
・旬の小鉢3品
This time, I chose crab claw vinegar, edamame from Kochi, and sesame tofu.
The crab claws are large, providing a striking impression.
It’s well-packed with ingredients, a great choice.
This sesame tofu has a cool texture and a smooth, chewy feel.
The aroma of sesame is perfectly complemented by wasaebi, making it a delicious dish.
・チューモ
This dish features shari made with red vinegar, and the ingredients for the topping were carefully prepared using a decorative knife.
The large interior toro melted in my mouth.
・Golden Tuna
This also has a rich base, with a sophisticated sweetness of fatty texture.
The surface has a firm texture, which was very pleasant to the taste.
・スズキ
It has a thick texture and a springy bite.
The light-colored soy sauce has a strong flavor of wasaabira, making it delicious.
・カマス
The surface of the skin has been roasted, emitting a pleasant aroma.
The flesh beneath the skin was extremely soft.
・タチウオ
This also has a delicious aroma when it is grilled.
The way of enjoying it, with those solid grains resembling soy sauce, was quite interesting.
Well, after enjoying 5 kusen of regular handmade sushi, now it’s time for another set of 5 kusen of creative sushi.
・サーフマとエビ
Just as the name suggests, this sushi features two main ingredients: salmon and shrimp.
Two different textures are enjoyable. The excellent flavor of the salmon and the texture of the shrimp stand out.
・Hamachi and Oki’s seaweed rolls
The vinegar that has been squeezed over the salmon has a wonderful aroma.
I enjoyed the soft texture of the halibut.
Because the seaweed has a firm texture, it's not the type of seaweed that can be chewed through. It's a luxurious way to enjoy seaweed rolls with every bite.
・Mehari Maki
A creative sushi made with a large tuna fillet wrapped in katsup leaves. This is a recommended sushi from "Sushimanabu".
The melting texture of the large tuna, combined with the crushing texture of the large chunks of eel, makes it a truly enjoyable experience.
Moreover, the takoyaki had a firm texture and delicious taste.
・サバの棒鮓
Compared to other sushi, this one is well-crafted, with every grain of rice packed tightly inside.
The surface is roasted, giving off a fragrant aroma.
The vinegar was not as strong as expected, making it easier to eat.
Finally, a golden serving plate was prepared, and they placed the sushi onto it and served it right before my eyes.
・底部はトロ、上部はウニ
This is also one of the recommended sushi items from “Sushimanabu”.
Just as the name suggests, it features seaweed, large shrimps, red seaweed, and oysters arranged in a pattern where the shrimps are at the bottom and the oysters are on top.
And then, sprinkle salt and matcha salt made from rice flour over it, and that's it.
If I wrap it with seaweed and eat it, I can see that there is hardly any tea-match flavor, and the matcha salt serves only as a garnish.
The seaweed was covered in the fat of the large tuna, making it even more delicious the more you chew it.
I found this creative sushi that allows me to enjoy the flavors of oysters and large tuna.

I refreshed the fat content of the sushi with the red broth, allowing me to enjoy the aftertaste.
The chef is an entertainer, and he’s a really interesting person. We enjoyed creating sushi in a fun and creative way.
We were able to enjoy authentic sushi prepared by a skilled chef in a comfortable and enjoyable manner.
Located at Tsurubashi Station, it feels like a relatively affordable and enjoyable sushi bar.
