◎ 신경을 조이는 조개:The octopus has a faint aroma of charcoal. Rivermond Farm’s tomato gravy, with a sauce made from white peaches and red onions. The colors of the red radish are truly beautiful!

◎ ミンククジラ:On top of the cannapin, there’s a fresh mint whale tartar, served in a tartine style. Uuuuh… delicious!
◎ Toyohashi Ichiro Farm's Fresh Vegetables:This dish features crisp-tasting lettuce, a sauce made from the outer parts of the lettuce mixed with a puree, and a sauce made from roasted white fish. The dish is also sprinkled with crushed homemade sesame seeds.
◎ ボロンのカンパーニュ & 発酵バター:Bread, made with whipped butter—both are truly delicious! ♡
○ MUNI Larion 2023 グラス 白ワイン:Italy, alcohol content: 12.5%.
◎ 三河湾のマグリ、黒米:The Kiyogo black rice used as a base layer has absorbed water thoroughly, yet it still retains a firm, chewy texture with a slight crispness. Among the salad consisting of Ichirou Farm cauliflower, arugula, and ricotta, a large piece of sea scallop stands out. A truly excellent dish. ♪♬
◎ ほうぼう 野村農園ポワロー:We served Hōbōya grilled over a charcoal fire at Fengjian Fisheries. The aroma is truly delightful! We enjoyed it with a sauce made from the bones of Hōbōya and Poarro from Nomura Farm's Leki and scallions. Additionally, Italian vegetables called Aretta were beautifully presented alongside the dish!
○ KATAGIRI ROUGE 2023 グラス 赤ワイン:Nagano Prefecture, Kamikawa Village, Kita-Ku. Nankou Kōzō Co., Ltd. Alcohol content: 12.5%. A wine with a slightly sour taste.
◎ 石黒農場 ほろほろ鳥 季節野菜:The Hirakuro Farm in Iwate Prefecture produces "Horohoro Birds," which are grilled over a charcoal fire after being seasoned with the broth extracted from the bones. These dishes are served with broth extracted from the bones and a sauce made from horseradish. Accompanying the dish are a variety of vegetables produced by farmers from Nagano, Gifu, and Aichi: peach-colored wazuko, lotus roots, white onions, snow peas, kale, romaine lettuce, etc. The presentation is a colorful one. ♡♡
