I visited the ocha-yaki and teppan-yaki restaurant "Ton・Ton Kitchen" on a weekday at noon.
The restaurant is two-story. We were seated at a two-person counter-table in the quiet corner of the first floor. The back wall provided a comfortable backdrop for our backs. There are no metal plates on the tables.
Although the bottle of beer was not listed on the menu created by the restaurant, there was a poster on the wall indicating that they served Sapporo Lager beer provided by the manufacturer. I asked if they were selling it, and they indeed served a medium-sized bottle of Sapporo Lager for 660 yen.
Regarding the cuisine, it seems that for lunch, there are more options for regular meals and bento sales. However, you can also enjoy authentic teriyaki dishes. I ordered the “Modern Dan” (891 yen).
From the customer's seats, it was not possible to see what was happening on the cooking iron plates in the kitchen. However, it seemed that the cabbages were cut by hand with a knife, rather than using machinery. Additionally, in a way that seemed to showcase the local product initiative, a rare soy sauce from Nibishi in Koga City, Fukuoka Prefecture, was placed in view for the customers. This was quite delightful.
It was served on plates in about 15 minutes.
Broadly speaking, it's a yakisoba topped with mixed grilled food.
The mixed-bake dish contains dough, cabbage, eggs, red ginger, and also cucumber slices. It is mentioned that the eggs used are from "Umiboku Eggs" produced at Nōjō Chicken Farm in Kataoka County, Fukuoka Prefecture.
On top of the mixed-baked body, a portion of thin pork was placed. Then, the binding dough was wrapped around it loosely and turned over before baking. After returning it to its original position, mayonnaise and sauce were applied in a swirling manner with a brush.
At the top, there was dried green algae sprinkled on the food.
According to the notice indicating that they would serve kari-shi, I asked for it and it was added to the dish. Since I learned the taste from a family who moved here from Osaka when I was a child, even now, whenever I have a favorite dish like o-yaki, I always want to add kari-shi to it.
Using a cooter on a plate rather than on an iron plate gives me a strange feeling. Moreover, the bottom of the plate is not a flat surface but a curved one. In Fukuoka, most grill restaurants have iron plates, but I often encounter places where there are no iron plates available for customers.
Nevertheless, the oshibori-yaki was delicious.
The sauce is sweet and spicy. It's a relief that the mayonnaise isn't excessive. The black pepper has a sharp, pungent taste. The surface and the soba are browned and have a crispy texture when eaten. The cabbage retains a crisp texture with a slight crunch. The heated egg adds a rich flavor. The soba provides a satisfying taste experience.
It was a cold day with snow fluttering around, but the happiness of delicious okonomiyaki and cold beer remained unshaken.
