Today, I took a paid leave to visit the best sushi restaurant in my hometown, Aoyama. Aoyama is a place that offers fresh ingredients regardless of the time of day!
Today again, there were a series of top-quality dishes featuring crabs and eels. Every dish was incredibly delicious, and I truly felt that it was a great experience to be here.
Considering the usual deliciousness of this restaurant, among all the various sushi shops out there, I can't say it lightly, but Aoyama-san is truly the best. It's quite difficult to come across a place like this.

Today, we have received a variety of dishes. No matter what you order, it’s always delicious! During this season, crabs are the best. By making a reservation in advance, you can get the best crabs available at that time.
Additionally, I always have the opportunity to try the "sukimori" first. This sukimori is truly the best ingredient for that day's sushi, serving as a perfect starting point for thinking about how to assemble the sushi that day. It's absolutely the best sukimori available.

Today, I visited Aoyama-san, the number one sushi restaurant in my history. Whenever I go to Aoyama-san, I have high expectations from the moment I make a reservation. But I definitely won’t be disappointed by those high expectations.
Every time, during that particular period and on that specific day, we can enjoy the best offerings. Today was indeed the perfect day to describe it in the most appropriate terms.
Firstly, during this period, the crab is indeed delicious. Today's crab was sourced from Kintō Prefecture's Jōkai. The previous time we visited, we had crab from Kashu Prefecture. Of course, that crab was also delicious. Personally, I prefer today's crab because its flesh is firmer and the flavor is more intense.
Additionally, recently I've been enjoying delicious eels during the year. However, winter eels are truly outstanding! The eel served today was also extremely delicious—its firm texture concentrated the flavor perfectly, making it truly wonderful. And, as always, eel roe is delicious! While salmon roe is also tasty, eel roe stands out as something special.
The sushi ingredients carefully selected by the chef are, without a doubt, the best in this day. No matter what you choose to eat, there is no mistake. Everything is extremely delicious. And finally, there was some new ingredients among them. It’s still just farmed products, but new ingredients are definitely great!!

Today, I visited Aoyama-san, who provided me with the best topic in my life. Since I was a child, I have visited many different sushi restaurants. Now, I only visit Aoyama-san.
At Aoyama-san's restaurant, the ingredients served are always delicious! That's no surprise, as Aoyama-san purchases only the best items from the market every day—not just according to the season, but only those that the chef has approved.
During this time of year, Matsuboshi crab is the best. However, if the chef does not approve of it, we won’t even consider purchasing Matsuboshi crab at all. That’s how Aoyama-san operates. Today, the chef himself said that the Matsuboshi crab he prepared was the best. It was small in size, but its flavor was exceptional. Just such a Matsuboshi crab.
Today, I ate both the items I wanted to eat myself and the recommendations given by the chef. No matter which one I chose, it was truly delicious!! I never thought sushi could be so delicious before. Every time, Aoyama-san's sushi makes me truly feel that way.
Moreover, not only is the food delicious, but the conversations with the master chef and the skilled craftsmen are also delightful. It truly makes one feel happy to have visited this place. Aoyama-san, it is not possible to dine at her restaurant on New Year's Eve. However, if you request this in advance, she can provide the best ingredients for your meal to take home.
I would like to request a few items that are absolutely essential. Also, please ensure that you include the ingredients recommended by the chef. Every year, the chef prepares the best ingredients available at that time, and I can thus enjoy sushi that truly suits my taste.
This year, it was a year full of the best red meat, as well as a plethora of extremely delicious sushi and sashimi. Personally, the MVP of this year's experience was the eel. It’s always delicious, but this year it was particularly outstanding, with a strong bite that made it even more flavorful.

Every time I visit, I am struck by how delicious Aoyama-san’s sushi and ingredients are! Depending on the season, she serves the best dishes. So, there’s no chance of getting bored. Every time I go there, I truly feel that it’s delicious!!
Just like usual, we start with the sashimi. Here, we can generally get an idea of today’s recommended dishes. Before ordering sushi, we also enjoy some special items of the day, such as eel or other delicacies that are particularly delicious that day. It’s a pleasure when we can make reservations in advance, so that the chef will prepare the dishes we like.
The selection of dishes is a mix of items that I personally like and those highly recommended by the staff. The recommended dishes are carefully chosen based on my preferences, so all of them are indeed things I enjoy!!!

Today, I suddenly felt a strong desire to eat sushi, so I visited Aoyama-san for the second consecutive day. Although the request came unexpectedly, they opened the counter in the private room at the back.
Even if it's delicious for two consecutive days, I don't have any problems with that. However, the chef took care of us and kept serving delicious dishes that didn't overlap with those from yesterday. There were dishes like fried matsutake mushrooms, as well as fried parts of eel. It was a series of delicious dishes that were different from what we usually get.
The tuna at Tōi’s restaurant was also changed compared to yesterday; it was served as sashimi. Truly, the chef is outstanding—I truly feel like I’m talking to Aoyama-san.

Today, I visited Aoyama-san, where they serve sushi that is incredibly delicious, even by my standards.
This year, due to the continuous hot weather, it seemed that domestic matsutake mushrooms would be hard to come by. However, they finally appeared. And for the first time this year, I had aoshima-style pot roast cooked in a earthen pot, which is something I look forward to every year.
Aoyama’s clay pot stew is truly outstanding. Of course, the matsutake mushrooms play a key role, but the combination of all these delicious ingredients truly makes it extraordinary!! The katsuo fish, matsutake mushrooms, and other top-quality ingredients not only contribute to the flavors of the broth, but they also bring about an unparalleled taste experience!!!
On that day, there was a small portion of tuna from Tōi. The tuna from Tōi is not only comparable to the tuna from Ōma, but some even say it's even more delicious than the Ōma tuna. Upon tasting it, I was amazed by the rich flavor of the white meat, and the quality of the albacore fillets—they had a exquisite umami taste, free from any unpleasant heaviness or dullness.

Today, the taro was extremely delicious. But today, finally, there’s a group of eels on the menu. The taste is so rich that it’s hard to believe it’s just at the beginning of the cooking process. The eels are so flavorful and juicy that they’re truly a pleasure to eat. I can’t wait to see how delicious they will become in the future.
Today, again, I started with a spicy dish, enjoying the recommended dish of the day. After that, I ordered a hand-held dish.
The recommended items for what I wanted to eat were all delicious. No matter which item I chose, it was truly a pleasure to be here today. There were numerous reasons that made this a great experience.

Aoyama-san will enter a holiday period that serves as a substitute for the Obon festival starting tomorrow. Therefore, today we have fewer topics to discuss than usual.
For such reasons, today I received a message from the head chef saying, "Please leave everything to me," and I completely entrusted everything to the head chef.
As a result, the sushi at Ayoyama-san, which is always delicious, became even more delicious than usual. Moreover, I was able to enjoy original sushi that I usually wouldn’t have the chance to eat!!! When this happens, I just want to leave everything in your hands again… (laugh)

Aoyama-san brings the best ingredients to the table at that time, carefully selected by the chef. So you can enjoy the most delicious dish of that day. The first thing you must try is the "Sukimae". This dish combines the best ingredients of that day, and knowing which ones are recommended makes it a must-try!!!
Also, the skewered dishes that are only served when the best tiger prawns arrive are truly irresistible. Since there are quite few opportunities to enjoy them, it is highly recommended to try them at least once!
Recently, I haven't been able to visit, so I really want to go there again soon!!
