銀座は日本を代表する高級商業地です。
No matter how many times I visit, it's a place where my heart feels excited and alive.
I chose this Ginza dinner for the following reasons:
Located quietly on the first basement floor of a building, there stands the sushi restaurant 【Ginza Tenpura Yoshitake】.
The interior features a bright lighting that creates an impressive impression, and the spacious counter shape gives a sense of openness.
Due to its location, the customer base is mostly composed of relatively refined and adult individuals. This makes it an ideal place for business events or formal gatherings.
There were three types of courses available, but I chose "Atao" in a way that was typical of a Japanese person.
15種類ほどの天ぷらが用意されており、一品一品が逸品です。食事の前菜やご飯、そしてデザートまで、充実した内容となっています。
Rather than being innovative, it has a stable feel that truly defines "this is the perfect kaiseki."
I was supposed to receive a generous amount of oil, but my stomach felt surprisingly light after eating. It was so light that I felt as though the meal had already been completely over.
That perfect degree of frying, truly showcases the master chef's skills.
The chef, who looks a bit stern at first, makes you feel nervous.
From time to time, they would share playful jokes while engaging in casual conversations. Their approach was truly impressive.
In the blink of an eye, it turned into a night filled with a comfortable atmosphere!

First, two types of sushi.
【エビの頭】はサッキュサッキュと軽やかに揚げられており、これから続くコースへの期待が高まります。
【銀杏】 はもちっとした食感と特有の甘味が抜群です。
Both dishes were drizzled with lemon flakes, which is a perfect combination. It makes me want to drink alcohol just to enjoy this flavor.
As an appetizer, we were served 【Walnut Tofu】, followed by a succession of sushi rolls.
【エビ】は少しレアな感じの揚げ方で、小さくても濃厚な甘みが詰まっています。
【小玉ねぎ】は、わざと焼き色をつけてあり、歯ごたえがあります。
The 【鱈】 was very gentle and light, which I personally found to be excellent.
Continuing with 【Shirago with Edamame】, it seemed like just plain shirago at first sight. But there was a delightful surprise.
The finely cut ginger serves as an accent, while the meaty shiitake mushrooms capture all the flavorful juices.
搭配着芥末的苦味和削碎的松露,我们享用了这道奢华的【卡帕奇奥】。作为点缀,我们又享用了一颗【虾】。
By frying it more thoroughly than before, the dish becomes more sweet and the meat becomes firmer.
After that, something typical of the season—yamaki!
【シルクスイート】は、安定した温かい感覚を与えてくれます。
And what impressed me was 【Kuri】! It was the first time I had it served as tempura.
A soft texture that melts in the mouth, with a moderate sweetness. It was a highlight of the day!
Next is the [child-carrying bass] that looks cute.
It has no bitterness at all, and you can enjoy a fluffy texture. The eggs are filled generously, giving a soft, creamy feel to the dish.
This is the first oyster I have received this season. The water has been removed, leaving a concentrated umami flavor. The fermentation process was absolutely perfect.
Delightful cherry shrimp paired with broth-filled dumplings, truly soothing to the senses. [Red Eggplant] is enhanced by a strong dose of arugula, which brings out the sweetness of the dish. [Fenghuang Steamed Rolls] features a richly flavored arugula, making it a delightful choice.
After experiencing the asparagus, which was surprising due to its juicyness even before peeling the skin just before frying,
The final item of the sushi is [Haguro].
The soy sauce that permeates the fried items at Sakusaku is truly delicious.
By the way, this restaurant's soy sauce has no sweetness at all; it focuses on the fresh, umami flavor of bonito fish.
The soy sauce used in large amounts, combined with the other ingredients, contributes to making the overall dish feel light.
Finally, there’s a choice for serving the meal.
I like the skyroll at that restaurant, so I chose it.
I felt that many places served soy sauce, but this is the typical flavor of tea saké.
It was delicious, and the rice itself was also cooked in a earthen pot, so it was even more tasty. Next time, I think it would be better to have tempura or kakiage along with the rice as a separate dish!
