The exterior is located on the first floor of a mixed-use building! The interior features a Japanese-modern space with L-shaped counters and private tables. It's a calm and refined atmosphere! This time, I was served the "Omakase Special Wresting Course".
First, there are 5 types of appetizers served together—mandarin orange stew, pumpkin tofu, soft-cooked octopus, cheese donburi, and eel shinsou. All these dishes are masterpieces that combine Japanese culinary skills, and they are truly delicious! As for the first order of sashimi, it’s "middle tuna sashimi." This is our signature style! Many people may initially think it’s just "middle tuna," but every time we serve it, we’re amazed by its incredible taste. Today’s catch is a "Hachinohe Prefecture-produced Matsushima/Hon-mago." With delicate slicing skills, we’ve managed to capture the delicate fat of the middle tuna, creating an unparalleled deliciousness that spreads throughout your mouth.
The next catch is the “Hirame” and “Aoori-crab” that are particularly outstanding from the Edo period! The Hirame has a exquisite taste! The Aoori-crab has a sticky texture, and the use of “saza” complements it perfectly, making it an absolute delight. Next up is the “Kue-sushi,” which not only looks beautiful but also offers a rich flavor! It truly is the king of root fish! It’s cut into thick slices, providing a satisfying bite.
Video-worthy scene! The beginning of "Tuna Smoked" – the aroma of smoked tuna spreads throughout the restaurant! How delicious it is! A must-try dish for those who love tuna! The mid-section dishes like "Black Cod," "Shrimp," and "Sea Urchins" showcase the best quality of the ingredients, with their dazzling colors and shine that stimulate artistic sensibilities. It also pairs perfectly with vinegar rice. The "Tuna Marinated Sauce" is a traditional technique unique to Edo-style sushi. However, it's amazing how this lean tuna can be so delicious! Not only are the chefs skilled, but the preparation is also outstanding. One of the dishes is "Salmon Roasted," which is perfect as an appetizer with sake. The moderate fat content of salmon pairs perfectly with pure rice wine, creating a wonderful combination. It's a taste that lovers of sake will definitely enjoy.
Following that are two military ships—the “Caviar Military Ship” and the “Uni Military Ship”! Both military ships are outstanding! The caviar, which I rarely have the chance to enjoy, was absolutely delicious. It truly lives up to the reputation of a Michelin-starred restaurant! And the “Tortakoulu Sashimi” is definitely delicious—a perfect combination of deliciousness! Also, the “Carrot Crab” is top-notch! The warm temperature and the moist texture of the carrot crab make it incredibly delicious. The “Crab Tea Porridge” is filled with luxurious ingredients like giant prawns and sashimi, making it very satisfying and delicious.
The main dish, “Ota Toro,” made its appearance! From the appearance alone, it’s a champion-level dish. The deliciousness inside the mouth is like that of a sushi king! It was an outstanding piece of food that I really wanted to order again. The last dish, “Hakozuki Yakugai,” was also top-notch! It melted in my mouth, soft and delicious. For dessert, there were “Kanpō Makisuki,” “Akadashi,” and “Dessert.” This time, it was a delicious hand-picked dish that felt like enjoying the best of the season. First, 5 appetizers! "Ryukyu Tōfu," "Tako no Narezushi," "Squid with Cream Cheese and Ebi Mochi," "Shinjo (a type of sweet potato dish)," and "Cream Cheese and Yubirigakusuki." All of them are refined and delicious. Next, a hand-cut pike caught in Shiohama, Miyagi Prefecture. It looks beautiful! The delicate fat portion is due to a careful aging process, so it's very delicious.
Today's masterpiece! The grilled dishes are made with "Kamasu," which is in season right now. The skin is grilled to perfection, and the fat is absolutely delicious! Next, the "Takoyaki" that was smoked using a smoker is released from its glass case. It smells of "apple chips" - truly a delightful taste. The cutlets include "Kiji Hatama," "Yari Ika Kombu Salt," "Ishiki," "Aji," "Hatta," "Monkfish Marinade," "Oysters," "Caviar," "Ebi," "Oysters, Ikura, Caviar Rolls," "Big Tuna," and "Uko." Each of these dishes is outstanding. The craftsmanship of the chefs and the fresh ingredients blend perfectly with Edo-style red vinegar shari, creating a delicious combination. The grilled dishes include "True Salmon Miso Grill," the steamed dishes include "Tea Bowl Steamed Green Beans with Emerald-Flavored Paste and Cherry Shrimp." And then there's the "Egg Roll," which resembles kastella bread. It truly lives up to its Michelin-star rating.
The menu included items such as "Kanpyo Maki," "Akadashi," and "Dessert," all of which were satisfactory.

Sushi prepared by top chefs is very popular. Currently, there are 12 stores in the Kanto area and 2 stores in the Kansai area.
The exterior is located on the first floor of a building! The interior is a peaceful and traditional Japanese space, featuring L-shaped counters and private tables. There are no serving trays at the counters, and the open kitchen has a flat design, creating a pleasant atmosphere.
Sitting at the counter, I was a bit surprised by the "young handsome owner"... But as a top-notch sushi chef who was selected from the Kanto region and sent to Fukuoka, it's definitely one of the best in that area. I'm really excited! I'm also looking forward to seeing how capable the young owner is in terms of procurement, preparation, and making sushi.
I received a "Omakase Hand-cut Course".
First, from the appetizer section, we had “Chūtoro” rolled fish! Setting aside my preconceived notions and eating a bite, I found that although it looked reddish in color, its delicate fatty texture was perfect. It was delicious! Upon asking about the ingredients, I learned that most of the seafood was sourced from “Nagahama Fresh Fish Market,” but the finest ingredients were actually delivered directly from “Toyoko Market.”
Next, as an appetizer, there are variations that resemble Kyoto cuisine's "authentic banquet dishes"! "Mixed vegetables of kale and ikura," "White mixed vegetables with persimmon," "Cream cheese and oysters," "Sweet shrimp in salt sauce," "Clams"... Each of these dishes is excellent and delicious. However, especially "Sweet shrimp in salt sauce" and "Cream cheese and oysters," they are truly outstanding choices. The pairing with pure rice wine and Nice Maria was also a great decision.
This sashimi is prepared using grilled method. In Kyushu, it is known as "ara". It's in its peak season right now! During the Great Sumo Kyushu Tournament, many wrestlers enjoy savoring the delicious "kara" from Kyushu. From sashimi to grilled dishes and shabushabushi, you can enjoy a complete range of delicious kara dishes without any leftovers.
“アジ握り”は脂の乗りが最高です!“アオリイカ握り”は格子状に包丁が入れられており、塩だけで十分美味しいです☆イカの中には“剣先イカ”も美味しいですが、“アオリイカ”は一年中美味しいです。
Next, the “Yait Tako” is prepared by being smoked in a glass case! When the owner opens the glass case, a delicate aroma of smoked chips fills the air. This premium fish, known as “Yait Tako,” truly deserves to be called “fully smoked.” Its deliciousness is indeed remarkable.
“Hirumori,” “akabe,” “mono nakka,” “uni,” “kinomoto dory,” “shaebi,” “dai toro,” “kuzuko” – these ingredients are used in various handmade dishes. Additionally, there’s “caviar rolls,” “uni-ikura-caviar rolls,” and “kazukari rolls.” Each of these dishes showcases the craftsmanship of the artisans and the selection of fresh seafood. The perfect balance of “shari” – the vinegar used in Edo-style sushi – is a unique feature of this restaurant. For those from Kanto region who have different taste preferences, the owner has created a special version using white vinegar instead of red vinegar to maximize the umami of the seafood. Other options include “miso” and “soy sauce,” which are carefully selected by the owner. The miso is a blend of red miso and Kyushu-style miso, reflecting the restaurant’s dedication to quality.
In terms of grilled dishes, I tried the "Salmon in Nishikyō Miso Sauce"! The egg rolls have a sweetness reminiscent of desserts, and the surface of the grilled food is extremely crisp. The popular "Stewed Squidfish" is perfect, with the squidfish's unique flavor fully appreciated. As for desserts, the "Applesauce" was truly satisfying throughout the meal.
