The broth is deeply infused, making the meat very tender.
The horse's levers have no bad habits at all; they have a crispy texture that is simply delicious.
I serve it with sesame oil, scallions, and brown rice salt. The brown rice salt is absolutely delicious.
Even if it's served in larger portions, it remains salty but not overwhelming, offering a smooth taste.
