We were served a course costing 5,000 yen. However, the meat didn't leave a very impressive impression. It wasn't necessarily bad, but overall, it felt like a simple and unremarkable dish.

The style of cooking with chunks is impressive and quite to my liking. The sauce also complements the dish well, providing a strong umami flavor. The texture was smooth and gentle.
◎ カイノミ
The texture was a bit rough, but the umami was rich, allowing one to truly appreciate the characteristics of a Wagyu beef.
◎ 中落ち
The texture of the fat was not very good; it was a sticky fat that remained on the tongue. However, in terms of taste, it was the best dish of the day.
◯ ツラミ
It had a decent bite to it, but the saltiness was well-balanced, making it quite delicious.
◯ 카르비
Some cuts had a higher proportion of fat, but those cuts were tough in terms of the fat content. It took time to properly remove the fat and cook them so that they could be enjoyed as delicious dishes.
△ 柔らかいロースト
If you describe it as "ふんわり", then it was indeed "ふんわり". However, the texture of the food was rough and with visible lines, making it difficult to chew thoroughly. The taste was also poor; the cold-freezing process didn't work well enough.

☆ カイノミ
It has a soft texture and feel reminiscent of tenderloins. The delicious umami of rose oil is perfectly combined with the dish. However, the small size of the cut pieces is a disappointment.
◎ サガリ
We cooked the meat in a block, then cut it into bite-sized pieces. It was soft, juicy, and had a strong, rich flavor.
○ ホホ肉
Although it was thinly sliced, the rich umami flavor was clearly present.
○ 中落ち
There was no unpleasant greasiness, and the mid-pulled wine was refreshing with a pleasant sweetness.
○ 칼비
There was a portion that resembled a clump of fat, with a rubber-like texture, which was quite unpleasant. However, the rest of the dish was decent.
△ ふわふわロース
It had a slightly unnatural texture, along with some elasticity, but overall, it was just average.

At Yokohama Station, we finally managed to find a good beef restaurant that can be used.
The meat quality of A5 female cattle is excellent, and the seasoning is also outstanding.
It was a highly satisfactory and excellent restaurant that was both reasonable in terms of price and quality.
I would definitely like to use this service again.

◎厚切りタン塩・・・弾力があり、柔らかくてジューシーなタンでした。
○トモサン・・・見た目とは違って、味わいはかなり淡白で、少し期待を裏切るものでした。
○炙りロース・・・・品質のばらつきが激しく、全体として肉の旨味が弱かった
△ミスジ・・・ボリュームは良かったが、血生臭さと筋っぽさが気になった。
