Looking for a Japanese-style restaurant in Shinjuku, I decided to try the sushi course at this restaurant, which has been selected by the Michelin guide.
Thankfully, it was located right on the 3rd floor of a building, just near Shinjuku Station.
When the door is opened, there is a L-shaped counter area.
There are also several private rooms available, which are much more comfortable than I had expected.
The dishes served were the "Jiangko Course": fried foods and set menu dishes were available.
First, warm the stomach before proceeding.
・Tuna Rich Soup
The umami is rich, but the broth has a light and refreshing taste that welcomes you upon arrival.
・Steamed dishes: Sashimi of kama salmon, sashimi of quail
Quality tuna and sweet squid.
It seems that for optimal flavor, it is recommended to let the fish age properly. The restaurant has done a great job in preparing everything accordingly before serving the dish.
This is a valuable dish.
And, finally, tempura...
⦿車海老
We received a delicious fried dish, seasoned with salt and lemon.
This restaurant also offers the "Karei Salt", which originated from this establishment.
And the jaw part of the shrimp is crispy, resembling shrimp crackers.
The bite was also enjoyable, and I managed to finish all the shrimp.
⦿栃木産のアスパラガス
It’s quite overweight.
The tips are crispy and juicy, with a slight bitterness that adds to their charm. The taste and bite also change as you move closer to the base of the stem. What an excellent quality of asparagus!
I've become quite a fan.
⦿The Red One
Once, it is said that the eel is frozen to release its umami flavor.
Nattily elastic texture, astonishingly thick. There really are such large fish. If I cook them, they seem like they’ll become completely rigid.
Three types of mixed dishes
・玉米豆腐
This seems to be a term or phrase that describes something tempting but potentially dangerous… (laugh)
・多子昆布
It has a delicious texture, just like that of baby shrimp.
Seems to be suitable for sake.
・サーディンの笹巻き鮨
The joy of unfolding the bamboo and its excellent aroma.
A small portion of mackerel was served.
⦿Falafel
Probably, this is one of the highlights of this restaurant.
The thick, exquisite scallops were cooked to reveal a three-layered cross-section.
The professionals at this fried food restaurant are truly amazing.
⦿Origami Mushrooms in Oita Prefecture
I, have repeatedly mentioned that it's a dish with a thick, delicious meat texture. Indeed, that’s the case. The shiitake mushrooms, covered in a thin layer of skin, seem to be a potential main ingredient for this dish.
⦿甘鯛
Fried white-fish crumb, my favorite dish.
The skin of the dish seems to be a key point, as having less coating is considered effective.
⦿ソラ豆
Wow! It's out now!
I really like soba, so I'm very happy. This is such a delicious taste and aroma!
・Eggplant and seaweed rolled wrap
The sushi has a delicious aroma of seaweed, and it is also topped with ikura and caviar.
It was as luxurious as a heavenly feast.
⦿さつま芋
It’s incredibly sweet. I thought it was a dessert.
⦿スズキ
From this point on, the soup was served on the table.
Actually, I really like tempura. But I didn’t even realize that I had never tried it before…
I was so fond of the salt lemon dish that I became completely obsessed with it.
⦿Kumamoto's Red Eggplants
Among the fried foods, this is one of the best I like. It's extremely hot, so be careful!
The exterior is crispy, while the interior is as tender as roasted asparagus—simply outstanding.
⦿Yōzuri
The serving of teppanyaki was made with bonito.
It's quite large, isn't it?
Therefore, I enjoyed using salt lemon (which I really liked and used up until the end!), heavenly soy sauce, and curry salt as well.
The last portion of food can be chosen from two varieties.
・天ぷら茶漬け
・テンどん
I ordered it as a stock tea nakama.
I heard that it's delicious to pour soy sauce over the tempura and then eat it with the tempura pieces spread apart. So, I followed that recipe.
With salted kelp and wasabi, even though I was full, I managed to eat everything up.
The tempura shrimp served with a takoyaki dish also comes with red broth.
And, there were also sweets available.
・Rafran's shaved ice with berry sauce and fruits
Also served matcha tea.
The chef was also very friendly and chatted with us, answering all our questions. It was a great experience.
Already... being a professional in the field, yet having a humble demeanor!
I understand the meaning of "天ぷらは外で食べる" – it means that tempura should be eaten outside.
There is also lunch available, and the prices are reasonable. Therefore, it is highly recommended that you visit this place yourself.
The summer fried food was simply outstanding!
