First, we were introduced to the meat that will be served today. The main dish is a brand beef from Gunma Prefecture, called "Masuda Beef". It was presented alongside dry ice, which immediately increased our anticipation for the rest of the meal.

The broth, which condenses the flavors of matsutake mushrooms and beef, has an astonishingly rich taste. The ingredients inside are also exquisite; I really wish I could make tea pickle with this dish. It’s a truly stunning piece of food from the very beginning of the meal.

A luxurious one-kun made of thick lamb meat. It is soft and has a smoothness that makes it feel substantial without being heavy.
◎ Red Wine Braised Beef Tenderloin
Cooked in red wine, the beef tartare is so tender that it breaks apart with ease. The flavor is deeply absorbed, making it an absolute delight.
◎Autumn salmon and beef cream croquettes with ikura
The flavors of salmon and Wagyu beef come together in succession, with pollock fish adding a third layer of richness at the end.
