The gourmet burger specialty store ‘BROZERS’, with its main branch in Yoban-chō, has expanded its chain of stores across Shin-Fu-chō, Nihon-bashi Takashima-ya, Ochanomachi, and Marunouchi. The founder, who trained at a hamburger restaurant in the suburbs of Sydney, Australia, had the vision to spread this unique style and atmosphere to Japan. He opened the store in Yoban-chō in 2000. The name ‘BROZERS’ comes from the fact that he started the business as a brotherhood. Using the last letter ‘Z’ in the English word ‘brothers’ instead of ‘BROTHERS’ symbolizes his determination to see this concept through to the end. The store is known for its burgers that combine the boldness of American style with the finesse that Japanese people are known for.

“ブラザーズ 新富町店”は、新富町駅の2番出口からすぐ近くに位置しています。ブラザーズらしい真っ赤な建物であるため、一目でわかります。人気店ということもあり、外国人客を中心に混雑しており、英語が飛び交っています。ここだけがアメリカ風の雰囲気を持っているように思えます。
Bruders’ number one favorite item is the [Lot Burger] topped with bacon, eggs, cheese, and pineapples. Typically, you can choose from four types of sauces: BBQ, teriyaki, red hot chili, and sweet chili. However, it was during Bruders’ 25th anniversary that they introduced a more versatile option: a Lot Burger that allows customers to choose from five types of seasonings (jerk spice, cajun spice, indians spice, spicy Chinese spice, and horsemeat broth spice) and five types of sauces (Greek yogurt sauce, original tomato sauce, American burger sauce, fruit mustard sauce, and extra hot sauce). So, I ordered that particular version this time.
According to the staff at the restaurant, the most popular option is the curry-flavored jerk spice, or the keajanspice that doesn’t have a curry flavor. The American burger sauce based on mayonnaise is also very popular. We ordered [Jerk Spice × American Burger Sauce].
When purchasing hamburgers at Brothers, it's a pleasure to receive an entire plate that includes a onion ring, French fry, and pickles.
I wrapped the 5×5 lot burger in a wrap and took a bite. First, I felt the fluffy texture of the buns. Then, the omelette sauce with a mayonnaise flavor and the American burger sauce came into contact with my tongue at the same time. The sourness of the sauce seems to enhance the umami of the patty. After that, the crisp lettuce, the slightly sweet pineapple, and the juicy tomatoes and vegetables each seem to be playing their own role, rather than just enhancing the overall taste.
Personally, what impressed me was the bacon. Although it isn’t cut into thick slices, its strong saltiness makes it instantly noticeable when it touches your tongue. It seems like a companion that enhances the flavor of the patties, acting as a rival to other ingredients in terms of their combined impact on taste.
The French fry comes with a pre-seasoned salt flavor, allowing you to fully enjoy the sweet taste of the potatoes themselves. The crispy onion rings that make up the coating are also very delicious when eaten occasionally.
