Due to the ingredients purchased on that day, the dishes will vary. I will review them in the order in which they were served by me.
The restaurant is located on the first floor, number 1, in a mixed-use building in Shinsaibashi. I made a reservation for 18:00, so I arrived 3 minutes before the opening time. Initially, I informed them that my companion was not feeling well and we would be visiting alone, but they managed to secure another companion, so we went together. When I told them about the reservation, they didn’t show any displeasure; instead, they greeted us with a smile. We sat at a counter seat in the back of the restaurant. The counter seats are arranged in an L shape, with 8 seats in total. The interior is beautiful and tasteful.
The menu for the course is determined on a "leave-it-to-me" basis, so I looked at the drink options and chose the regular option, which is the Kaku Hi-Boil. Since there were also wines like Yamazaki and Shiraz, maybe those would be better?
First, the drinks arrived. I took a drink with my companion. I was very thirsty, so the hi-burrito was delicious. It was thick in consistency, and the amount served was just right. The chef came over to the counter to say hello. He even prepared sushi right in front of me. Now, let’s start the meal.
Tako's Aji Sauce Jelly
The first side dish arrived in a glass container. It was soft and had a good flavor, with mume as an accent. In Kansai region, it's common to eat yuba during summer months, and indeed, the flavors of the season are delicious.
Shima Azenigi Pesto Wae
The blue fish is prepared without any unpleasant odors, and its flavor is smooth and delicious. It seems that fresh fish is used in the preparation. The smooth texture allows one to fully appreciate the taste of the fish. I ate it lightly.
From here, sashimi is served. A towel and a wet wipe came first.

In a glass resembling a cocktail glass, abalone is served. It can be eaten with a spoon. In just one bite, you can appreciate the deliciousness of the abalone. It’s a luxurious and exquisite dish that leaves you utterly impressed. I enjoyed each bite as I received this dish.
A masterpiece of Japanese cuisine, tempura.
The ingredients include salmon, tuna wrapped in green onions, okra, and shiitake mushrooms. Apart from the shiitake mushrooms, it was recommended to eat them with salt. The wrapper is a light-temaki. Eating them with salt allows the natural flavor of the ingredients to be fully appreciated. The texture changed, allowing me to enjoy the temaki in a different way.
Golden Tuna
Grilled with a burner, it pairs perfectly with red vinegar shari. It has a fragrant and delicious taste. You can truly feel the umami of the fish, making it incredibly delicious.
KinKi no Koshidengi
This dish features a richly flavored kinto, served in small bowls with a soft texture. The fresh kinto has a delicate white-flavored taste, making it easy to eat. It’s recommended to enjoy each bite carefully, as you can fully appreciate the fish’s deliciousness.
Sukiyaki
In a small pot, vegetables and meat are cooked over a solid fuel source. Once it boils, you can serve it directly. Let's enjoy the dish that has been gently stewed for a long time. The vegetables have a rich flavor due to the flavors absorbed from the broth, making them quite delicious. The meat is also tender and easy to eat. This is my first time enjoying sashimi-yaki in a way that’s quite different from usual.
Chūtoro
The tuna is here. According to the butcher, this tuna comes from Shikawa City in Yamaguchi Prefecture. The medium-sized tuna is well-suited to being served with red vinegar shari. When eaten, it melts in the mouth. The sweet taste of the fatty tuna lingers in the mouth. I enjoy a luxurious yakiniku.
Tuna and Lean Fish Cuts
It’s a beautifully colored red fish. To make it easier to eat, it has been finely cut with a knife. Since it’s a zukuri fish, the flavor of the fish is well absorbed into the flesh. This fish also melts in your mouth. It’s a luxurious yakiniku that is truly delicious.
Tortuka
The sushi served was made with seaweed. It was cut into a convenient size, and when eaten, the taste was delightful—the aroma of the sea and the combination of fresh fish made it truly delicious. The fish was of high quality, so the texture was also excellent.
Soups
It's a miso soup based on white miso. It contains vegetables, so it's light and refreshing. The vegetables are also soft and easy to eat.
プリン
A praline with a handmade feel. It seems to be a special creation by the chef. It’s rich in flavor, but has a very mild aftertaste. The service for the meal was also impeccable.
This restaurant only serves reservations. I had the joy of dining on Edo-no-maisen sushi at the counter, and it was absolutely delicious. I thoroughly enjoyed the Edo-no-maisen sushi. The service was perfect—it was a comfortable experience, with no awkwardness or tension in the interaction. When I left, they even walked me to the entrance, which I found very kind of them. I apologize for any inconvenience caused.
