Yakisoba Pong is a premium restaurant that opened on July 2021 on the 9th floor of GEMS in Roppongi. It serves as a new flagship store for a renowned group of yakitoria restaurants, with the aim of offering even better quality beef and a luxurious atmosphere. The interior features private rooms and seats overlooking the Tokyo Tower. From the windows, you can enjoy a beautiful view of the Tokyo Tower. The menu includes various cuts of black beef, including Yamato beef, as well as side dishes such as salted green onions, thick-cut halibut, ichibo, subton, and lamp. There’s also a special menu offering views of the Tokyo Tower. Yakisoba Pong is easily accessible from Roppongi Station, making it an ideal choice for those who seek both convenience and exclusivity.

●キムチ盛り合わせ
The first kimchi platter I was served had three types: kaktekki, cucumber, and bok choy. None of these had an overly strong sour taste, and the spiciness was controlled so that it would come over gradually over time. The kaktekki was cut into angular pieces, allowing me to fully appreciate the moisture of the radish when biting down. The cucumber retained its crisp texture despite being pickled, with a rich marinade filling it completely. The bok choy had a sweet taste in the leaves, while the core still retained a slight tang.
●ナムル盛り合わせ
このレストランでのメニューは、主に鶏肉とモヤシで構成されています。鶏肉は柔らかく煮込んだ後、胡麻油で和えてあります。そのため、繊維を噛むとしっかりとした香りと旨味が感じられます。モヤシは水っぽさがなく、シャキシャキとした食感が保たれています。
●センマイ刺し
The semenai shi is made with white senmai, and it seems that proper preparation has been done, so there is no unpleasant odor. The meat is finely cut, and when served with the special sauce, its crispy texture is clearly noticeable. The sauce has a slight sweetness along with a hint of acidity, which helps to preserve the flavor of the senmai without making it too flat. The taste changes as you chew on it.
●ユッケ タレ
ユッケはタレで和えたスタイルで提供されます。肉の切り方は細すぎず太すぎずで、噛むときに少し繊維感が残ります。タレには甘さと醤油のコクがあり、重くなりすぎない塩味が抑えられています。卵黄と合わせると一体感が生まれます。口に含むと、最初にタレの甘みが、その後に肉の旨味が、最後に卵黄のまろやかさが重なる流れが分かりやすいです。
●チョレギサラダ
The Cholegi Salad is characterized by its homemade cholegi dressing, which is infused with the aroma of sesame oil and a strong saltiness. The lettuce is cut into large pieces, giving a satisfying crunch when chewed. Scattered on top are seaweed, which enhance the flavor further. The combination of the saltiness from the dressing and the freshness of the seaweed makes this salad a perfect choice as an appetizer between grilled meats. It’s a salad that definitely makes one want to eat it again and again.
●たたみネギたん塩
The “Mono no Tadamine Negi Tan Shio” is a dish that I must order whenever I visit this restaurant. On top of thinly sliced tuna, there’s an abundance of finely chopped green onions. The presentation is neat and pleasing to the eye. When you put it in your mouth, first you experience the aroma of green onions and the saltiness, followed by the richness of tuna’s fat and umami. Finally, adding lemon helps to round out the taste. The green onions have little spiciness, and their portion is well-balanced with the tuna. It feels like you could eat several servings of this dish.
●上タン
上タンは、たたみネギたん塩よりも厚みのあるカットであり、黒タンの特有の弾力とジューシーさがはっきりと感じられます。表面には細かい切り込みが入っているため、噛んだ時に硬さはなく、程よい歯ごたえの中に脂が広がっています。塩だけのシンプルな味付けで、レモンを搾ると脂の後味が軽くなり、もう一枚食べたくなる。たたみネギたん塩と比べると、同じタンでも食感と味わいがかなり違うことが分かります。タン好きとしては、両方を試してみたいと思いました。
●Thick-cut Wagyu Beef
The thick-cut karamale is seasoned with salt. Each slice has a sufficient thickness, and when roasted on the baking sheet until the surface develops a brownish color, the juices remain firmly in the meat. At first bite, it has the elasticity typical of karamale meat, but over time, the fibers begin to break down. Even with just salt as seasoning, a strong flavor is still conveyed. The fat content is not excessive, and the strength of the red meat is the main characteristic, making it easy to appreciate without feeling too heavy. When paired with beer or high-proof alcohol, the aroma of karamale is particularly prominent.
●Thick-cut Lamp Salt
この厚切りランプは、赤身の風味をしっかりと感じたい人向けの一品です。脂は控えめで、表面を焼くことで香りが立ち、中は柔らかく仕上がります。塩だけの味付けなので、噛むごとに赤身の旨味が増していく感覚が分かりやすいです。
●イチボ 山形牛のタレと卵黄
Ichibo is made using a cut of Yamagata beef. It is prepared by combining sweet soy sauce with egg yolks. The surface of the meat is thoroughly seared to enhance its aroma, while the inside is cooked until it retains a slight redness. When you bite into it, first you taste the sweetness and aroma of the soy sauce, followed by the delicate fat characteristic of ichibo. The addition of egg yolks further enhances the overall flavor. This dish creates a smooth texture, with the beef’s firmness reduced, but there is no lingering richness from the fat. Those who prefer a strong flavor from the combination of soy sauce and egg yolks will find this dish particularly appealing.
●PONGAオリジナル冷麺
The final dish is a cold noodle soup characterized by a broth made from comtan. Unlike typical cold noodle soups with strong sourness, this version features the rich umami of beef bones as its base, with a slight sourness added to balance the taste. The noodles are thin and firm, providing a good chew when chewed, yet they aren’t too hard. The soup initially has a rich umami flavor, followed by a refreshing aftertaste that calms the mouth after eating grilled meat. It’s a type of cold noodle soup that allows one to drink the soup naturally even when full.
●石焼ビビンバ
石焼ビビンバは、熱々の石鍋で提供されます。しばらく置いておくと、底の部分にしっかりとした焦げ目ができます。具材にはナムル類やひき肉、卵黄などがあり、コチュジャンを好みの量だけ加えてよく混ぜます。一口食べると、まず香ばしい焦げ目の香りとカリッとした食感が楽しめ、その後にご飯の甘みと具材の旨味が広がります。最後には満足感が高まり、肉をしっかり食べた後でもつい完食してしまいました。

This is a dish that I must order when I visit PONGA PREMIUM. It features thinly sliced tuna served with finely chopped green onions. The tuna is quickly grilled on a baking sheet so that the green onions can blend well with the tuna. By not overcooking the tuna, its tenderness and juicyness are preserved. The aroma of the green onions and the saltiness create a perfect balance. Squeezing lemon juice adds a fresh touch to the dish, making it tempting to eat another portion right away. The way the green onions are chopped, the amount used, the thickness of the tuna, and the amount of salt used are all well-balanced. This dish truly deserves to be called its own signature product.

This time, I enjoyed the dishes as individual items. However, I feel that next time, I would like to try a course that includes sliced beef. The seats with Tokyo Tower views are truly special, making them ideal for dining on anniversaries or to entertain important people. The quality of the meat dishes and other menu items is also excellent. Not only are the grilled dishes delicious, but the raw menu items are also worth visiting again. When I want to enjoy the night view along with high-quality grilled meat in Roppongi, this restaurant comes to mind as my first choice.
