It looks exquisite, with a design that resembles those created by pastry chefs. The appearance of the cake is an important factor.
Apple Rare Cheesecake: Children get high enthusiasm when they see the "apple" appearance. Gently insert a fork into the outer layer. The cream cheese has a solid texture. It lacks acidity and has a mild sweetness. Cinnamon crumble adds a touch of flavor to the taste. Moving towards the center, there’s something like an apple caramel compote. The concentrated sweetness from the condensed cream cheese blends well with the cream cheese itself. The composition is well-planned, but overall, the cream cheese feels more like a hard whipped cream. The lack of acidity makes it a regrettable aspect.
The chocolate cake also has a beautiful layer-like structure, reminiscent of an opera.
First, I will enjoy the combination of thick, bitter chocolate and choco-latte cream at the top. Coffee complements this vibe well.
Next, the sponge batter below, and the ingredients that are mixed together...
A combination of ganache cream and chocolate cream with pralin. The various creams have melted into a creamy texture, and the sweetness of chocolate spreads through the sponge. This version has a relatively more milk-based sweetness.
The overall composition is good, but there is still a slight sense of stiffness. It would be better if the texture were more smooth and creamy. Otherwise, the sweetness won’t remain in the mouth. It feels somewhat lacking.
But the children really liked them, eating more than half of each one. My mother thought to herself that she would like to try the matcha-bask cheese cake next time.
