One of the attractions is the ability to enjoy the aroma of dishes like the straw-baked meat, a specialty of the restaurant.
As a reward for myself, I went for lunch alone.

Appetizer: 【Fried Waterless Moon Tofu】
It was in June that we received the information; half of the year has already passed, so it seems like it's now in a triangular shape, with only half of the square remaining.
Wishing for a healthy and peaceful life, this ado-bon tofu has a light wrapper, with a creamy texture inside.
How comforting it is to feel healed.
【鱧の梅肉添え】は、ジュンサイと子メロンを組み合わせた料理です。
The tilapia is surprisingly soft and can be easily shredded.
The richness of the broth is complemented by the crisp texture of cherry melon and jujube, creating a perfect balance.
【鰹藁焼き】はこちらの名物です。
If it is smoked right in front of you, a pleasant fragrance of fine straw spreads throughout the air.
The surface is crispy and fragrant, while the interior retains an astonishing amount of moisture, making it juicy.
No harsh iron taste, but a perfect balance of umami throughout the dish.
The best experience comes from using salt, homemade ponzu, and fresh garlic in the dishes.
Next up is an item that also delights the eyes: 【Eight Courses】
・White glutinous millet served with a soft sauce
Inside, there are fruits like tomatoes, and on top of that, there’s a mixture of chicory.
It’s much sweeter than fruits, yet it leaves a refreshing aftertaste.
・Tori shellfish and roasted eggplant salad
The taste of the broth is simply outstanding.
It's truly something that only Japanese cuisine can do—to touch and move one's heart in such a small place.
・Steamed figs and plum sesame miso cream dressing
It's steamed, so the sweetness is highlighted. Along with that, there’s a rich flavor of sesame and miso.
This is so delicious that I really wish I could have it served as a dlyu.
・Aoliirika and Zukini fried tofu
The oya with its plump elasticity and softness, combined with zucchini—a vegetable that has an excellent moisture content.
The aroma of a sauce made by frying soy sauce and salt enhances the taste of this dish.
・Steamed Squid Sushi
The scallop is soft, and everything about its tips and saltiness is perfect.
The actual mountain pepper placed on top serves as an accent point.
【Tengu River Eel】
Until just before serving, the fish was swimming freely. Upon arrival, it was quickly skewered and carefully seared over the fire.
The bitterness is quite good, and the moss vinegar dressing that accompanies it complements the dish perfectly.
【Kumamoto Red Eggplant with Ginger and Crust Crab Stuffing】
Before putting it in the mouth, it has a spicy aroma of ginger.
When you put it in your mouth, its flavor becomes more gentle. The advantages of each ingredient, as well as the care and delicacy with which it was prepared, are fully appreciated.
New Taiyaki is fried with a simple method, while red eggplants are cooked in a different way to become soft and creamy. Wax gourd absorbs the broth, making it juicy.
The hairy crab is rich in flavor and moisture, making it hard to keep any remaining dumpling mixture even for a little bit longer.
Here, I finally tried some Japanese sake. Laugh.
Here, the dish called 【土鍋御飯】 is served.
このお米は、北海道産のゆめぴりかです。以下の4つの段階で楽しむことができます。

2: Just cooked.
3: After steaming

Hana-e is a type of al dente rice with a remaining core at the edge of the bite. The sweetness is deeply felt as you chew it.
Just after it is cooked, it has a slightly previous appearance.
After being steamed, the first bite brings a sense of sweetness, and that lingering flavor continues for a long time.
The charred ingredients are simply pancake-like; if you spread soy sauce on them, they make a delicious snack.
I have tried comparing the cooking methods of different types of rice before, but this is the first time I've truly felt such a significant difference.
It was a memorable experience.
Finally, there’s 【Fern Cake】
Delicious. A beauty that stretches out gracefully.
The black honey has the fragrant taste of brown sugar, making me want to lick it all over again.
It was a moment of peace and tranquility as the meal came to an end.

“It’s good to be a Japanese person…” I truly thought that.
And the atmosphere among the chefs was very pleasant, so even being alone, I felt very comfortable there.
