The aroma of matsutake mushrooms is incredible! The broth made from chicken and matsutake mushrooms combines perfectly. The sweet taste of the eggs is enhanced by the creamy broth, making the filling truly delicious.
Both matsutake and local chicken are grilled on a metal plate just before serving, allowing the juicy flavors to be concentrated. This Western-style tea pudding was something new for me‼️ It truly lived up to the expectations of a full meal – an intense and delicious experience❣️
Matsutake Fritt with Japanese-style Tartar Sauce

Purple Chinese cabbage, lotus seeds, and other vegetables are carefully prepared with vibrant colors. The dishes are served as steamed grilled dishes. They are healthy without using any fat!

The rare cut of meat was perfectly cooked; it melted in the mouth‼️ For the slightly fatty sirloin, I used sweet soy sauce from Kagoshima. Chef Shimizu personally rubbed the sea beet leaves from Izu Honsei Wasaibee right before serving it‼️ To enhance the creamy texture of this premium fillet, I added "Shio no Hana," a coarse salt known for its high-quality properties, along with algae salt. This salt enhances the flavor of the meat even more‼️

Once again, the garlic has reignited its aroma‼️ It smells wonderful‼️
The taste of the zuwai crab is also rich, and the lettuce provides a refreshing crisp texture when eaten. Since it’s from Yamagata’s Tsuyahime brand, the crab has perfectly shaped grains. The “handmade pancake” served alongside is delightful. It’s not just natural-baked crumbs; they are handmade, giving the impression of premium, softly baked pancakes. Even the soy sauce has a hint of matsutake mushroom flavor.
Seasonal Fruits
During the Yamagata Fair, at the Raphran's Bramanje, there was a fruit carving that was as perfect as that of Chikutoya-san. A high-quality tea was served, and it was a truly impressive finale.

There is also a wide variety of wines available, and I ordered an alcoholic-free Opia Chardonnay. ❤️
This is a perfect place for a special dinner for adults and women, as well as for dates or business receptions. I would love to visit here again for another special dinner!
