Since it was ready, I thought about inviting someone to try the sushi and dishes prepared by “Yamato Ko”. I really enjoyed the experience. It was a gathering organized by M-san from Kiseki’s wholesale of salmon. Not only was the salmon from Kiseki delicious, but I also had the opportunity to fully appreciate the flavors of Yamato Ko’s cooking, from the sushi itself.
It features an elegant and private layout, with a Western-style design. It gives the impression of being a special space where guests are treated with great care. Not only is the decoration outstanding, but the sense of taste in terms of food also ranks highly. The quality of service is also astonishingly high.
Due to my previous efforts in following Yamato-ko-san’s cooking, when he spotted me, he was immediately surprised and exclaimed "Oh!" and readily recognized me, which made him very happy.
The food was excellent from the very beginning. As I closed my eyes and waited, I listened intently to the sounds around me. The first dish served was a appetizer that was placed on the first spoon. It consisted of a mixture of sweet potatoes and radishes. The dish was accompanied by caviar, which added a salty flavor. The softness of the radishes and the delicate aroma of the sweet potatoes created a truly delightful experience from the very first bite.
The delicacy of the dishes was truly astonishing. The pork stew was well-crafted without being heavy, with an excellent balance of texture. It didn’t become overly creamy, leaving just enough texture for the last bite. The fat was well-arranged, avoiding any sticky or unpleasant sensations. The pumpkin soup, which usually has a thicker consistency, was exceptionally rich yet easy to drink. There’s a hidden mechanism behind this combination: the EPA and DHA in the tuna help prevent oxidation, while the vitamin E in the pumpkin prevents further oxidation. It’s simply delicious, but there’s more to it than just taste alone! The combination of iron and beta-carotene in the blood also contributes to its overall effectiveness. Yamato-ko-san! It’s so delicious, yet it’s also beneficial for health… truly amazing!
Yes, my favorite dish is the rostered tuna. It was truly amazing. Although the blood mixture has a certain odor, it doesn’t just have an impressive iron content. Tuna that swims in the open ocean, like the real tuna, has excellent swimming abilities. Therefore, the blood mixture contains a high amount of angiotensin and carnosine. Moreover, Kiseki’s tuna is a leader-tuna, which means it’s the strongest among all tunas in terms of both physical strength and intelligence.
Do you know this? The blood of this top-quality salmon contains a high concentration of imidazolidine compounds. Eating it makes you less prone to fatigue—in other words, it helps to reduce fatigue. It seems like the fatigue can be completely eliminated! It's quite rare to find sushi restaurants that can properly prepare such delicious blood-based dishes. I've never encountered anything as delicious as this.
Additionally, I also ate plenty of Minami Marugo. Compared to the regular marugo, Minami Marugo contains about 1.2 to 1.5 times more DHA and EPA. It’s truly the strongest ingredient available for consumption. I don’t know of any other place that serves sushi made with Minami Marugo raw. The taste is so good that you can eat as much as you want. “Minami Marugo is truly the best in terms of Omega-3 content.” That’s what I remember. It’s several times better for the body than regular marugo. Even though it has a creamy texture, its light fatty taste makes it an extremely beneficial ingredient for the body.
By the way, I've recently realized that the notion of "delicious food made from heavy ingredients" is actually a illusion. People are starting to notice that beef with its heavy fat content should be avoided, and instead, they prefer meat that has less fat content. This trend towards healthier and more delicious foods is definitely going to have a significant impact on sushi as well.
Although it might be a trial and error approach, Yamato-ko-san must also be challenging this. From our conversation, it seems that her knowledge is quite extensive and she has shown great interest in the research. It seems that the fish are available sometimes, and not others. So, if possible, it would be interesting to ask for “Is there any Kiseki tuna available?” when placing an order in advance.
Unlike ordinary sushi shops, this place employs a unique approach to preparation, has skilled chefs and uses high-quality ingredients. It also shows remarkable dedication to research on the ingredients themselves. Moreover, the service level is of a hospitality that truly sets it apart. Its rating is rapidly rising—“Yamato Ko” is truly a standout.
