A restaurant with the concept of enjoying the food cultures of Kanazawa, Ishikawa, and Hokuriku. We offer rare ingredients and local sake that are beloved in Kanazawa.
The location is about a 3-minute walk from either Tokyo Metro Hibiya Line Nihonbashi Station or Chubuji Station.
Located quietly on the side of the capital's highway, this restaurant opened in May this year at the ground floor of its underground building.
The interior of this restaurant features a simple and calm design with a white theme. There are 5 counters and 6 tables, providing ample space for dining.
With a soothing piano as the background music, three people—including the head chef—are busy preparing the lunch service.
Such lunches are mainly limited-edition daily change menu items, such as pork liver katsu menu items, and beef tendon salt-roasted menu items.

Each set meal includes side dishes, small plates, rice, miso soup, and seasonings. The rice is produced from Koshihikari rice from Ishikawa Prefecture.

It was served in about 10 minutes.
A tranquil Japanese-style meal spread out on a large dinner plate that resembles a ryokan.
The set of 5 types of sashimi includes mackerel, bream, salmon, orangefish, and sweet shrimp. This dish is a creation by the chef at your discretion; the dressing is made with white mullet.
These sashimi dishes all have a uncomplicated taste and are well-preserved. They offer a delicious flavor that is enhanced by the soy sauce, making them a pleasure to enjoy.
What stood out especially was the bream, which had an abura and sweetness far surpassing that of the anchovy. It was truly exceptional!
And the whitefish ponzu has a sourness that enhances its transparent, sweet flavor. It’s so delicious that you can't help but crave sake along with it.
The ingredients paired with the miso soup are anchovies, which add a gentle flavor to the broth through their julienned preparation. This enhances the light and delicate taste of the tender fish, making it even more delicious.
Since I had the desire to eat fish, I ended up choosing the most expensive set meal. However, on some days, I would prefer to try the daily rotating grilled fish set meal.
Night features a compelling selection of local dishes from Hokuriku region, along with Kanagawa’s famous Kanagawa Oden.
Fish and Kaga vegetables directly sent from Kanazawa. Combined with local sake, you will surely enjoy a truly Kanazawa-like experience.
Since there was no date set for the opening, there are very few reviews from people who have been to the restaurant since its opening.
It’s a hidden restaurant that still embodies the essence of Kanazawa in its concept.
