Saturday at 5:30 PM, appointment was made for a visit.
By elevator, to the 9th floor.
The door was open, and right in front of me stood a brownish-door with a white screen.
Camera-equipped intercom.
Booked the place and went inside.
Light and beautiful interior of the restaurant.
White wooden single-board counters, 7 seats.

Citrus, saltiness, minerals, lime, pineapple, yellow peach.
The sourness is mild and very delicious.

This sashimi has a strong salt taste, with rice vinegar that is rather mild. The fat in the fish is well-marinated.
The dressing contains red vinegar.
Baby Leaf serves chopped cucumbers and other ingredients.
◼️Salmon Fillet with Parsley Butter Sauce
Large-sized shellfish. It's quite rare to find shellfish of this size.
A rare process of grilling.
French essence with parsley butter.
Savory taste suppressed, elegant in quality.
I hesitated between Japanese sake and wine, but I decided to go with wine for this dish.
◼️ Somen bonito fillet with garlic sauce
The quality of this dish is extremely high.
The garlic sauce is complemented by a citrus-based ponzu that provides a refreshing taste.
◼️白子のフライ
The fabric is light and has a crisp texture when eaten.
The dish was lightly seasoned with salt, and then the pickled citrus fruit was squeezed onto it.
◼️キンキのポワレ
The thickly sliced, steamed and grilled kimchi has plump flesh, making it delicious.
The golden-colored filling, made from the broth extracted from the kinto placed on the plate, and the green-colored olive oil add flavor to the dish.

◯かすご(春子鯛) = ふっくらとした食感。鯛の子供のようなもの。皮目が美味しいです。
◯平目昆布〆=肉厚なカット、身がもっちり、昆布がとても美味しいですね。
◯ほたて=すぐに殻を剥いたため新鮮さが際立っています。繊維がしっかりしており、弾力性もあります。
◯小肌=〆方は本当に王道で、私の好みに合っています。
◯赤身柵漬=柵を湯引きして漬けに。
◯車えび=ゆっくりと広がる上品な甘み。
◯中とろ=しっかりとした熟成感を持つ料理。歯ごたえがあり、食べやすい。
◯雲丹=
◯シャコ雌=小樽産。もうすぐ終盤だ。
◯縞鯵=脂が滑らか。身の弾力がある。
◯すま鰹=ネギと生姜の薬味で。赤身に脂が乗り、とろみがあります。
◯大トロ=見た目が素晴らしく、触れるととろけるような質感。
◯穴子=ふわふわの食感が最高です。蒸して焼いたものです。
◯干瓢巻き四つ切り=自家製の干瓢。甘く塩気のある煮汁を十分に吸収し、ジューシーな味わい。
◯玉子=厚焼き玉子。出汁と甘さで好みの味に調理されます。
◼️Miso Soup
Using the broth from Kinki to make miso soup.
The keykii was grilled, and a fragrant taste could be perceived.
A cup filled with rich umami flavors.
◼️デザート
Homemade dorayaki, vanilla ice cream sandwich.
The crust of the dora-yaki is moist, plump, and delicious.
The cheese has a smooth texture with a rich flavor, making it a perfect match with vanilla ice cream.

A new sushi restaurant opened in the New Katsura Building.
The owner's one-man operation.
Originally a patissier and chef specializing in French cuisine, his dishes that incorporated French essences as accompaniments to the food were truly outstanding.
The amount of meat per serving is also 13 kana, with fine rolls and pearls. There's plenty of volume, so I was completely satisfied.
This is a sushi restaurant that will remain memorable this year.
I would like to visit again.
