I went on a business trip to Kobe and Fukuoka via phone reservation. Actually, I wanted to go with my son who is currently in Fukuoka, but he completely rejected the idea, so I went alone.
This is a restaurant that specializes in courses featuring the abundant local chickens from Oita. It's located in a corner of a building where the Panorama Square restaurant is situated. I made a reservation on a Thursday at 8 p.m.
I arrived just in time, and a calm atmosphere was welcomed by the counter. Five of the ten seats were occupied. There also seemed to be private rooms available, which were also full. I had made a reservation over the phone, so I was looking forward to enjoying sashimi there.
Let's start with Asahi Live Beer (693 yen). After drinking two glasses of beer, I ordered three glasses of Kiroku's strong soda beer.
The menu is as follows: it's a meal for three people—a young husband and wife, along with a young woman. The atmosphere is calm and relaxing. We enjoyed our meal while listening to jazz.
The skewers are served with salt and sauce for each part. However, the salt is of a mild concentration. The overall presentation is elegant, allowing the flavors of the ingredients to be fully appreciated. The sauce is also sweet and lightly flavored, yet still elegant. It's quite impressive.
Vegetables included were fresh snow peas, shiitake mushrooms, and other delicacies.
〈Eaten Items〉
○豊の店のガラススープ〜鶏肉の旨味がたっぷりで、甘さと脂質が良い感じです。塩は控えめにしています。
○Sashimi: Heart, liver, thigh, and rib. This one also has a sweet taste.
○Sashimi of liver – Served with snow salt; sesame oil enhances the flavor, making it refreshing.
◇ももねぎま〜塩を少なめにした、鳥の旨味と甘味が楽しめる料理
○ハーブサラダ〜オリーブオイルと塩。あっさり
◇Heart〜Ignited in a perfect balance
◇セセリ〜肉厚な皮、脂がちょうど良い
○おにおろし〜ポン酢が弱めでちょうど良い
◇Hand bones – A strong, chewy texture
◇大分の椎茸〜肉厚、ポン酢が少し控えめで、素材の味わいがあります。
○茶碗蒸し〜とても柔らかな味わい。これは本当に美味しいです\(^-^)/
◇アスパラガス〜佐賀産、塩分が多い
○Skin-based ponzu salad – pairs well with sprouts
○もつの煮込み〜生姜の効果で甘みがあります。これも素晴らしいです\(^o^)/
◇スナップエンドウ〜熊本産のものは、火入れが施されているため風味が豊かですが、中はとてもジューシーです。旬に食べると最高の味わいです\(^ω^)/
◇Head skin〜With sauce. The sauce is dark in color, but not too sweet.
◇心残り〜心臓の動脈だそうで、タレと山椒で。これも旨い\(^o^)/
◇チャオチャン〜黄色い部分の色は意外と薄かったです。味はあっさりしていました。
○親子丼〜〆として、これは絶品‼︎卵ともも肉が旨し\(^-^)/
This is a very elegant course. It seems that the master chef ate a lot, and he considered this dish to be the most flavorful one! Unfortunately, the smoking rack was made of stainless steel, so the food couldn't be seen clearly. However, the cooking method and the amount of salt used were perfectly balanced. The wife was also cheerful, and the atmosphere was pleasant.
Once again, I felt that Kyushu is a treasure trove of delicious ingredients. Thank you very much for the wonderful meal.
