Enrique-san recommended this restaurant as delicious, so I was intrigued by the "Sushikei" in Ginza. This is my first visit there.
The chef is from Hokkaido and quite young, but he has a calm demeanor and is a very resourceful person, Mr. Shimada Keigo.
The name of the restaurant seems to be derived from its owner’s name (^^)
The ingredients used for this day's dish were mainly selected from local Hokkaido products, provided by General Shimada.
This dish was prepared using otsumaki and red vinegar shari. Each item was carefully crafted, making it excellent in terms of timing of presentation, overall balance, volume, and cost-performance. Honestly, it was a sushi restaurant that exceeded my expectations!
It seems that General Shimada's knife skills are based on the choice of ingredients. Even when he talks to us, he can cut things beautifully without even looking at the items in hand. ( ^^)/
Personally, I found the following dishes particularly delicious: "Yamawasaibi from Hokkaido" and "Hokkaido salmon liver soy sauce grilled dish".

By the way, the lunch menu offers a "Chirashi Sushi" with a price of 2,200 yen including taxes, available for a limited time of 15 meals per day. However, as someone who has ordered a customized dinner course, I would really recommend ordering a dinner meal instead. (´▽`)
Additionally, the dinner menu includes a "grilled course" that costs \16,500 including taxes!
There are many sushi restaurants in Ginza, but I didn’t know that there were so many wonderful ones. It’s really nice to have the chance to encounter such a place. I’m glad I got to visit these sushi restaurants. ★☆
