I learned about the opening information for this restaurant, and I managed to make a reservation on the very first day of its grand opening.
“Is this really Ginza?” I thought. With its luxurious and magnificent design, after taking a temperature and disinfecting my hands, I went to the counter seats on the first floor.
A beautiful single-board counter made of Japanese cedar, doors adorned with vivid cherry blossom patterns and scenes of Matsushima, a wooden refrigerator, and the partition between this space and its neighboring space is not just ordinary acrylic board; it is a magnificent piece of work with intricate decorations. In the future, it seems that I will often have to hold the handshake from the second-floor seats. But on this day, I was seated right in front of Major Fujimoto.
Tax-inclusive 880 yen for a fresh beer from Asahi Beer. While enjoying this rich-tasting beer, what I ordered that day was a set menu costing tax-inclusive 27,500 yen. The details of the menu are as follows:
① Tuna Cutlet with Clouded Cod Handmade Roll
This dish is from "Yama Kō", a restaurant owned by Mr. Yama Kōzō, who serves as an advisor at the restaurant. The fish used is a 96.2 kg specimen caught in Shiohama.
雲丹は、北海道利尻・礼文島の、最高品質の雲丹と有明海の海藻を組み合わせて作られる手巻き料理です。

② Cucumber, hairy crab, salt water, agar
A refreshing dish that combines vegetables from the Hakamine Mountains with hairy crabs, and salt water horse manure and rehmannia root from Yuishi.
Surrounded by a gentle broth, deliciousness spread throughout my mouth. (●´ω`●)
③アラ・伊佐木 黒ムツのお造り
I enjoyed the dish prepared with wasabi soy sauce and ponzu. The meaty texture of the fish, the smooth flavor of Izuki, and the rich fatness of the black mullet all contributed to the delicious taste of the white fish (*´▽`*)
Here, I ordered a special pure rice sake that costs 1,210 yen including tax.
④ Funebukibe Maki
A dish where warm scallops are wrapped in crispy seaweed. It truly captures the aroma of sweetness and the flavor of the coastal region (^0_0^)
⑤金目鯛燻製 鮟肝最中
The smoked tuna, packed with umami flavors, was finished by applying charcoal fire from above to make it fragrant. The cute cat-shaped sashimi was complemented by Nara pickles and cashews, making it a delicious dish (=^・・^=).
⑥ナガスクジラ
I had a rare specimen of narwhal meat that appeared to be beef. One piece was served plain with garlic soy sauce, while the other piece was topped with a mixture of wisteria parsley and ginger.
I might be scolded by anti-whaling organizations, but delicious food is still delicious. =゚ω゚)ノ
⓻Steamed Abalone with Liver Sauce
A dish featuring a large piece of Bungo Black Abalone, carefully steamed to perfection.
I ordered the abalone, which was carefully prepared and was thoroughly mixed with the liver sauce. A deliciousness beyond words spread throughout my senses. ヾ(´▽`*)ゝ

Shari is used for sashimi made from beef jerky or other ingredients with strong fat content, using red vinegar. For the rest of the ingredients, white vinegar is preferred.

I enjoyed the authentic sushi from Yama Kō-san, the harmony between the crispness of the nori and the delicious taste that spread throughout my mouth. ✧♡

⑳ノドグロ焼き
A freshly grilled norigoro was served, sandwiched between seaweed.
I enjoyed the harmonious blend of fatty noodles and seaweed. ヾ(≧▽≦)ノ
㉑ 煮穴子
The sashimi was prepared with kama fish, and there was a hint of yuzu flavor added to it.
The softness that melts in the mouth, and the deliciousness that comes from skilled craftsmanship—such was the experience we had at this restaurant. (๑˃̵ᴗ˂̵)
㉒ネギとろタク
This dish features a variety of ingredients, including shiitake mushrooms, nori, and even wakame seaweed.
The texture was also delightful with this thick cigarette (^-^)
